How to Make Biscoff Caramel Cheesecake

Step 1

Preheat the oven to 325°F.

Grease a 9-inch springform pan.

Step 2

In a medium bowl, combine the graham cracker crumbs, crushed Biscoff cookies, sugar, and melted butter.

Step 3

In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

Add the sugar and continue beating until fully incorporated.

Mix in the sour cream and vanilla extract.

Add the eggs one at a time, mixing on low speed just until combined.

Fold in the Biscoff cookie butter and caramel sauce until the batter is smooth and evenly blended.

Step 4

Pour the cheesecake filling into the cooled crust and smooth the top.

Bake for 55 to 65 minutes, or until the edges are set and the center still has a slight jiggle.

Turn off the oven, crack the door open, and allow the cheesecake to cool in the oven for 1 hour.

Remove from the oven and refrigerate overnight.

Step 5

Once completely chilled, gently warm the Biscoff cookie butter until smooth and pourable.

Spread it evenly over the top of the cheesecake.

Step 6

Pipe dollops of whipped cream around the outer edge of the cheesecake.

Place a whole Biscoff cookie into each whipped cream swirl.

Finish with a generous drizzle of caramel sauce over the entire cheesecake.

Slice and serve.
