Cherry Coke Cheesecake

This Cherry Coke Cheesecake is a fun twist on classic baked cheesecake, with layers of Coca-Cola cheesecake and sweet cherry cheesecake baked over a buttery graham cracker crust. The bottom layer has that familiar caramel-like Coca-Cola flavor, while the pretty pink cherry layer adds sweetness and fruity flavor to every slice.

Finished with fluffy whipped cream and bright red cherries, this is one of those desserts that looks impressive without being difficult to make. It’s perfect for summer parties, birthdays, holidays, cookouts, or anytime you want a cheesecake that’s a little different from the usual.

Why You’ll Love This Cherry Coke Cheesecake

If you love cherry cola, this cheesecake brings those same flavors together in a rich and creamy dessert. Instead of mixing everything into one batter, the cheesecake filling is divided into two portions.

Coca-Cola flavors the bottom layer, while cherry pie filling is added to the second portion to create the pink cherry cheesecake layer on top. Once sliced, you get both flavors in every piece.

And, of course, whipped cream and cherries on top give it the classic Cherry Coke look.

How to Make Cherry Coke Cheesecake

Prepare the Graham Cracker Crust

Preheat the oven to 325°F.

Lightly grease a 9-inch springform pan.

Combine the graham cracker crumbs, sugar, and melted butter in a medium bowl. Stir until all of the crumbs are evenly coated and resemble wet sand.

Press the mixture firmly into the bottom of the springform pan.

Bake the crust for 8–10 minutes, then remove it from the oven and allow it to cool slightly while you prepare the cheesecake filling.

Make the Cheesecake Filling

Place the softened cream cheese and sugar in a large mixing bowl. Beat on low to medium speed until smooth and creamy.

Add the sour cream and vanilla and mix just until combined.

Add the eggs one at a time, mixing on low speed after each addition. Stop mixing as soon as each egg disappears into the batter.

Avoid beating too much air into the cheesecake once the eggs have been added. This helps give the finished cheesecake a dense, creamy texture and reduces the chance of cracking.

Make the Coca-Cola Layer

Divide the cheesecake batter evenly between two bowls.

Stir the Coca-Cola into one half of the cheesecake batter until evenly combined.

Pour the Coca-Cola cheesecake batter over the prepared graham cracker crust and spread it into an even layer.

Make the Cherry Cheesecake Layer

Add 1/4 cup cherry pie filling to the remaining cheesecake batter.

Stir gently until the cherries are distributed throughout the batter and the filling takes on a pretty pale pink color.

Carefully spoon the cherry cheesecake batter over the Coca-Cola layer.

Adding it by spoonfuls rather than pouring it all into the center helps keep the two cheesecake layers more distinct.

Gently smooth the top.

Bake the Cheesecake

Bake the cheesecake at 325°F for 55–65 minutes.

The outside of the cheesecake should look set, but the center should still have a slight jiggle when you gently move the pan.

Turn off the oven, crack the oven door, and leave the cheesecake inside for about 30 minutes.

Remove it from the oven and allow it to finish cooling to room temperature.

Cover and refrigerate for at least 6 hours, but overnight is even better.

Decorate the Cherry Coke Cheesecake

Once the cheesecake is completely chilled, carefully remove the sides of the springform pan.

Pipe generous swirls of whipped cream around the outside edge of the cheesecake.

Place a bright red maraschino cherry on each swirl of whipped cream, or decorate with fresh cherries when they’re in season.

For an extra Cherry Coke look, you can spoon a small amount of cherry pie filling into the center of the cheesecake or drizzle a little cherry syrup over the whipped cream.

What Does Cherry Coke Cheesecake Taste Like?

This cheesecake is rich and creamy with layers of cola and cherry flavor.

Coca-Cola has notes of caramel, vanilla, citrus, and warm spices, which work surprisingly well with a classic cheesecake filling. The cherry layer adds sweetness and a bright fruitiness that balances the richness of the cream cheese.

The buttery graham cracker crust brings everything together and adds just enough texture to every slice.

Tips for the Best Baked Cheesecake

Use Room-Temperature Ingredients

Allow your cream cheese, sour cream, and eggs to come close to room temperature before mixing. Softened cream cheese blends much more smoothly and helps prevent little lumps in the batter.

Don’t Overmix the Eggs

Once you begin adding the eggs, keep the mixer on low and mix only until combined. Too much air in a cheesecake batter can cause the cheesecake to rise dramatically in the oven and then sink or crack as it cools.

Don’t Overbake It

A baked cheesecake doesn’t need to look completely firm when it comes out of the oven. The center should still wobble slightly.

It will continue setting as it slowly cools.

Chill It Overnight

Although six hours is usually enough time for the cheesecake to set, an overnight chill gives you the best texture and the cleanest slices.

How to Get Clean Cheesecake Slices

Use a large, sharp knife to slice the chilled cheesecake.

Dip the knife into hot water and wipe it completely dry before making your first cut. Wipe and warm the knife again between slices.

This is especially helpful with this cheesecake because it allows the two pretty layers to show clearly in each slice.

Can I Make Cherry Coke Cheesecake Ahead of Time?

Absolutely. Cheesecake is actually one of the best desserts to prepare ahead.

Make the cheesecake the day before you plan to serve it and let it chill overnight. Leave the cheesecake undecorated while it chills, then add the whipped cream and cherries shortly before serving.

That means there is almost nothing left to do when it’s time for dessert.

How to Store Cherry Coke Cheesecake

Keep the cheesecake covered in the refrigerator for up to 4–5 days.

If you’ve already decorated it with whipped cream, loosely cover it so you don’t flatten the topping.

Individual slices can also be stored in airtight containers in the refrigerator.
