Ingredients

For the Cake

  • 2 ¼ cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 2 cups water
  • 2 cups sugar
  • 6 tablespoons butter
  • 2 tablespoons oil
  • 1 tablespoon vanilla extract
  • 2 eggs
  • ½ cup birthday sprinkles (plus more for topping)

Use your favorite vanilla buttercream, or:

  • 1 cup butter, softened
  • 3 cups powdered sugar
  • 1–2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

1. Preheat & Prepare

Preheat your oven to 350°F and lightly grease an 8×11 baking dish.

2. Combine Dry Ingredients

In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

3. Heat Water, Sugar & Butter

In a saucepan, combine the water, sugar, and butter. Heat until the butter melts and the mixture is warm—don’t boil. Let cool slightly, then stir in the oil and vanilla.

4. Mix the Cake Batter

Pour the warm mixture into the dry ingredients and whisk until smooth. Add the eggs and mix again. Gently fold in the birthday sprinkles.

5. Bake the Cake

Pour the batter into the baking dish and bake for 25–30 minutes, or until a toothpick comes out clean. Let the cake cool slightly.

6. Poke the Holes

Using the end of a wooden spoon, poke holes all over the cake.

7. Add the Pudding

While the cake is still warm, pour the homemade vanilla pudding over the top, spreading it so it sinks into every hole. Let chill until fully set.

8. Frost

Make your buttercream: beat butter, powdered sugar, milk, and vanilla until fluffy. Spread over the chilled cake.

9. Decorate

Add more birthday sprinkles on top for a cheerful, colorful finish.
