Birthday Poke Cake
Birthday Poke Cake
This Birthday Poke Cake is soft, sweet, colorful, and filled with creamy homemade vanilla pudding. It’s the perfect celebration cake—funfetti-style sprinkles baked inside, rich vanilla flavor throughout, and a luscious layer of buttercream on top. Every bite is moist, festive, and full of that classic birthday-cake magic.

If you love easy make-ahead cakes or anything with pudding, you are going to fall in love with this recipe.

It starts with a simple homemade vanilla cake, gets soaked with my homemade vanilla pudding, and finishes with fluffy frosting and sprinkles. It’s a party in a pan!

This Birthday Poke Cake also makes the best next-day dessert. The longer it chills, the more the pudding settles into the crumbs, giving the cake that ultra-moist, almost bakery-style texture.

I love making it the night before a celebration because it frees up time the next day and tastes even better after resting in the fridge. It’s one of those dependable recipes you can whip up without stress and know it will turn out perfectly every single time.

Ingredients
For the Cake
- 2 ¼ cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- ½ teaspoon salt
- 2 cups water
- 2 cups sugar
- 6 tablespoons butter
- 2 tablespoons oil
- 1 tablespoon vanilla extract
- 2 eggs
- ½ cup birthday sprinkles (plus more for topping)

For the Filling
- 1 batch homemade vanilla pudding
For the Frosting
Use your favorite vanilla buttercream, or:
- 1 cup butter, softened
- 3 cups powdered sugar
- 1–2 tablespoons milk
- 1 teaspoon vanilla extract

Instructions
1. Preheat & Prepare
Preheat your oven to 350°F and lightly grease an 8×11 baking dish.
2. Combine Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
3. Heat Water, Sugar & Butter
In a saucepan, combine the water, sugar, and butter. Heat until the butter melts and the mixture is warm—don’t boil. Let cool slightly, then stir in the oil and vanilla.

4. Mix the Cake Batter
Pour the warm mixture into the dry ingredients and whisk until smooth. Add the eggs and mix again. Gently fold in the birthday sprinkles.
5. Bake the Cake
Pour the batter into the baking dish and bake for 25–30 minutes, or until a toothpick comes out clean. Let the cake cool slightly.

6. Poke the Holes
Using the end of a wooden spoon, poke holes all over the cake.
7. Add the Pudding
While the cake is still warm, pour the homemade vanilla pudding over the top, spreading it so it sinks into every hole. Let chill until fully set.

8. Frost
Make your buttercream: beat butter, powdered sugar, milk, and vanilla until fluffy. Spread over the chilled cake.
9. Decorate
Add more birthday sprinkles on top for a cheerful, colorful finish.

Jennie’s Thoughts
I absolutely adore this Birthday Poke Cake because it’s just so happy. There’s something magic about seeing those sprinkles baked into the cake, then pouring silky homemade pudding over the top—it becomes unbelievably moist. It’s the kind of dessert that feels nostalgic, comforting, and celebratory all at once.

This is one of those recipes that everyone loves, from kids to adults, and it’s perfect for birthdays, potlucks, holidays, or anytime you want a guaranteed crowd-pleaser. I especially love how easy it is to assemble. No leveling, stacking, or complicated decorating… just pure, simple deliciousness.

Storage
Cover and refrigerate for up to 4 days. This cake stays incredibly soft thanks to the pudding layer. Another thing I love about this cake is how customizable it is.

You can switch up the pudding flavor, change the sprinkle colors to match a holiday, or tint the frosting for a themed party.

It becomes whatever you need it to be—birthday cake, celebration cake, or just a sweet treat to brighten your week. No matter how you make it, the combination of soft cake, creamy pudding, and fluffy frosting always feels special and homemade with love.
