How to Make Birthday Cake Cinnamon Rolls

Step 1: Make the Tangzhong

In a small saucepan, whisk together 3 tablespoons of flour and 1/2 cup whole milk until completely smooth.

Place the saucepan over medium-low heat and cook, whisking constantly, until the mixture thickens into a smooth, pudding-like paste.

This should take approximately 2–3 minutes.

Remove from the heat and allow the tangzhong to cool until lukewarm.

This little step makes such a difference in the finished cinnamon rolls because it helps the dough retain moisture and creates that wonderfully soft, fluffy texture.

Step 2: Prepare the Cinnamon Roll Dough

In the bowl of a stand mixer fitted with the dough hook, combine the flour, dough conditioner, instant yeast, sugar, and salt.

Add the lukewarm milk, egg, egg yolk, softened butter, vanilla extract, optional almond extract, and prepared tangzhong.

Mix on low speed until a soft dough begins to form.

Increase the mixer speed to medium-low and knead for approximately 8–12 minutes, until the dough becomes smooth, stretchy, and elastic.

The dough should be soft and slightly tacky but not excessively wet.

If necessary, add a little additional flour, 1 tablespoon at a time. Be careful not to add too much flour because that can make the cinnamon rolls dense.

Step 3: Let the Dough Rise

Place the dough into a lightly greased bowl.

Cover with plastic wrap or a clean kitchen towel and place in a warm, draft-free area.

Allow the dough to rise for approximately 60–90 minutes, or until doubled in size.

The exact rising time will depend on the temperature of your kitchen.

Step 4: Make the Cinnamon Sugar Filling

While the dough rises, prepare the cinnamon sugar filling.

In a medium bowl, combine the softened butter, brown sugar, cinnamon, and vanilla extract.

Mix until a thick, spreadable cinnamon sugar mixture forms.

Set aside until ready to assemble the rolls.

Step 5: Roll Out the Dough

Once the dough has doubled in size, transfer it to a lightly floured work surface.

Gently roll the dough into a large rectangle approximately 12 × 18 inches.

Spread the cinnamon sugar filling evenly over the dough, leaving a small border along one long edge.

Sprinkle the rainbow jimmies evenly over the filling.

Step 6: Roll and Slice

Starting with the long 18-inch edge, roll the dough into a tight log.

Pinch the seam to seal.

Using unflavored dental floss or a sharp serrated knife, cut the dough into 9 large cinnamon rolls, approximately 2 inches thick.

Arrange the cinnamon rolls in a greased 9 × 9-inch baking dish, placing them in three rows of three.

Step 7: Let the Cinnamon Rolls Rise Again

Cover the baking dish loosely and allow the cinnamon rolls to rise for approximately 35–60 minutes, or until noticeably puffy.

The rolls should expand and begin touching one another.

This second rise helps create those tall, beautiful bakery-style cinnamon rolls.

 IMG_4212-576x1024 Birthday Cake Cinnamon Rolls

Step 8: Bake the Cinnamon Rolls

Preheat the oven to 350°F.

For extra gooey cinnamon rolls, you can pour 1/4 cup of slightly warmed heavy cream around the risen rolls just before baking.

Bake for approximately 28–35 minutes, or until the tops are lightly golden and the dough in the center is baked through.

If the tops begin browning too quickly, loosely cover the baking dish with aluminum foil.

Allow the cinnamon rolls to cool for approximately 10 minutes before adding the frosting.

Step 9: Make the Birthday Cake Frosting

In a large mixing bowl, beat the softened butter until smooth and creamy.

Gradually add the powdered sugar and continue mixing until combined.

Add the vanilla extract, optional almond extract, pinch of salt, and 2 tablespoons of heavy cream or milk.

Beat until the frosting becomes light, fluffy, and smooth.

If needed, add another tablespoon of cream or milk until the frosting reaches your desired consistency.

Step 10: Frost and Decorate

Spread the vanilla birthday cake frosting generously over the slightly warm cinnamon rolls.

The frosting will soften and melt into the cinnamon swirls, creating a delicious creamy topping.

Finish with plenty of colorful rainbow sprinkles.

Serve warm and enjoy!

Jennie’s Thoughts

I absolutely love making homemade cinnamon rolls, and these Birthday Cake Cinnamon Rolls are such a fun way to turn an ordinary breakfast into something special!

I wanted these to be really tall, fluffy, and soft, with plenty of gooey cinnamon filling and a thick layer of vanilla frosting. And of course, they needed rainbow sprinkles because what’s a birthday cake without sprinkles?

One of my favorite things about making cinnamon rolls from scratch is watching the dough rise into these beautiful, pillowy rolls. I use the tangzhong method because I love how soft it makes the dough, and I also like using Gold Medal flour and King Arthur dough conditioner for homemade sweet rolls.

I think these would be absolutely adorable for a birthday breakfast, especially with a little birthday candle tucked into one of the cinnamon rolls!

And you definitely don’t have to wait for someone’s birthday to make them. They’re just as delicious for a Saturday morning, holiday brunch, or anytime you’re craving something sweet.

If you love homemade cinnamon rolls, I think you’re really going to enjoy this fun birthday cake version!

What Is Tangzhong?

Tangzhong is a simple technique that involves cooking a small amount of flour and milk together before adding it to bread dough.

When the flour and milk are heated, the starches absorb moisture and thicken into a paste.

Adding this mixture to the dough helps it retain additional moisture during baking, which creates a softer, more tender finished bread.

For cinnamon rolls, this means fluffy layers, a soft center, and a texture that stays tender longer.

It’s one of my favorite methods for making homemade cinnamon rolls!

Tips for Making Tall, Fluffy Cinnamon Rolls

Don’t Add Too Much Flour

The dough should feel soft and slightly tacky after kneading. Adding too much flour can make the cinnamon rolls dry and dense.

Use Room-Temperature Ingredients

Room-temperature eggs and softened butter blend more easily into the dough and help create a smooth texture.

Let the Dough Rise Completely

Don’t rush the rising process. The dough should double in size during the first rise and become noticeably puffy during the second rise.

Use Rainbow Jimmies

Rainbow jimmies work better than tiny nonpareil sprinkles because they are less likely to bleed their colors into the dough and frosting.

Cut the Rolls with Dental Floss

Unflavored dental floss makes clean cuts without flattening the cinnamon rolls.

Don’t Overbake

Bake until the cinnamon rolls are lightly golden and the centers are cooked through. Overbaking can make them dry.

Frost While Warm

Allow the rolls to cool slightly before frosting. The warmth helps soften the frosting so it settles into the cinnamon swirls.

How to Make Birthday Cake Cinnamon Rolls Extra Gooey

If you love extra gooey cinnamon rolls, there are a few easy ways to make them even more delicious.

First, use plenty of softened butter in the cinnamon sugar filling. The butter melts together with the brown sugar and cinnamon while baking, creating a rich, gooey filling.

Second, avoid adding too much flour to the dough. A soft dough creates a more tender cinnamon roll.

Finally, you can pour a small amount of slightly warmed heavy cream around the cinnamon rolls just before baking. The cream adds richness and moisture, creating a softer, gooier texture.

Be sure to bake the centers completely, especially if you add the optional heavy cream.

Frequently Asked Questions

Can I make Birthday Cake Cinnamon Rolls without tangzhong?

Yes, but the dough formula would need to be adjusted because the tangzhong contributes both flour and liquid. For the intended soft, fluffy texture, I recommend following the recipe as written.

Can I use bread flour instead of all-purpose flour?

Yes, although bread flour absorbs liquid differently and can create a slightly chewier texture. Gold Medal all-purpose flour is recommended for this recipe.

Can I leave out the almond extract?

Absolutely! The almond extract is optional. Vanilla extract alone gives the cinnamon rolls a delicious sweet flavor.

What kind of sprinkles should I use?

Rainbow jimmies are the best choice for these cinnamon rolls because they hold their shape and color better during baking.

Why are my cinnamon rolls dense?

Dense cinnamon rolls can result from adding too much flour, not kneading the dough enough, or not allowing enough time for the dough to rise.

Can I freeze Birthday Cake Cinnamon Rolls?

Yes! Freeze the baked cinnamon rolls without frosting, then thaw, reheat, and decorate when ready to serve.

Can I make these cinnamon rolls the night before?

Yes! Assemble the rolls and refrigerate them overnight before the second rise. The next morning, allow them to become puffy before baking.
