Banana Oatmeal Muffins
Banana Oatmeal Muffins
Soft, hearty, and perfectly sweet — these Banana Oatmeal Muffins are the ultimate breakfast or snack for busy mornings.

They’re made with ripe bananas, warm oats, and simple pantry ingredients that bake into fluffy, moist muffins every time.

If you love a wholesome muffin that still tastes like a treat, this recipe is going to be a favorite.

These muffins are also a great way to use up overripe bananas — the riper they are, the sweeter and more flavorful your muffins will be. I love keeping a few bananas in the freezer so I can whip up a batch anytime the craving hits.

And because the recipe uses simple, everyday ingredients, it’s one of those go-to bakes you never have to plan ahead for. They feel wholesome, homemade, and incredibly satisfying every single time.

Ingredients
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ½ cup sugar (or brown sugar)
- 1 egg
- ⅓ cup melted butter (or oil)
- 1 teaspoon vanilla
- ½ cup milk
Optional add-ins: chocolate chips, chopped walnuts, pecans, dried fruit, or a sprinkle of oat crumble on top.
Instructions
- Preheat the Oven
Preheat your oven to 350°F and line a muffin tin with paper liners or spray with nonstick spray. - Mash the Bananas
In a large bowl, mash the ripe bananas until smooth. Mix in the melted butter, sugar, egg, vanilla, and milk. - Mix the Dry Ingredients
In another bowl, combine the oats, flour, baking powder, baking soda, cinnamon, and salt. - Combine Wet & Dry
Add the dry mixture into the banana mixture and stir gently until just combined. Don’t overmix — it keeps the muffins soft. - Add Optional Mix-Ins
Fold in chocolate chips, nuts, or anything else you love. - Bake
Scoop the batter evenly into the muffin cups. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean. - Cool & Serve
Let the muffins cool for a few minutes in the pan, then transfer them to a wire rack.

Jennie’s Thoughts
These banana oatmeal muffins are one of those recipes I love because they’re so comforting and easy. The oats give them such a cozy texture, and they make the muffins feel hearty without being heavy.

They smell incredible while they bake — that warm, banana-cinnamon aroma that feels like a hug in muffin form.

I also love how customizable they are. If I’m craving something sweet, I toss in chocolate chips. If I want something a little more wholesome, I add nuts or leave them plain.

They freeze beautifully and are perfect for breakfast meal prep, snacks, or after-school treats. This is one of those recipes you’ll find yourself making again and again.

Serving Suggestions
Serve these warm with a pat of butter, a drizzle of honey, or a spoonful of peanut butter. They’re delicious for breakfast, but equally perfect for tossing into lunchboxes or enjoying with a cup of coffee in the afternoon.
