Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup sugar (or brown sugar)
  • 1 egg
  • ⅓ cup melted butter (or oil)
  • 1 teaspoon vanilla
  • ½ cup milk

Optional add-ins: chocolate chips, chopped walnuts, pecans, dried fruit, or a sprinkle of oat crumble on top.

Instructions

  1. Preheat the Oven
    Preheat your oven to 350°F and line a muffin tin with paper liners or spray with nonstick spray.
  2. Mash the Bananas
    In a large bowl, mash the ripe bananas until smooth. Mix in the melted butter, sugar, egg, vanilla, and milk.
  3. Mix the Dry Ingredients
    In another bowl, combine the oats, flour, baking powder, baking soda, cinnamon, and salt.
  4. Combine Wet & Dry
    Add the dry mixture into the banana mixture and stir gently until just combined. Don’t overmix — it keeps the muffins soft.
  5. Add Optional Mix-Ins
    Fold in chocolate chips, nuts, or anything else you love.
  6. Bake
    Scoop the batter evenly into the muffin cups. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool & Serve
    Let the muffins cool for a few minutes in the pan, then transfer them to a wire rack.
