  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Set aside.
  3. Cream the Butter and Sugars: In a large bowl, using a hand mixer or stand mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the Wet Ingredients: Beat in the pumpkin puree, egg, and vanilla extract until fully combined.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips.
  6. Scoop and Bake: Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Slightly flatten each cookie as they won’t spread much during baking.
