Ingredients:
- 2 3/4 cups all-purpose flour
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 cups granulated sugar
- 1 large egg
- 1 tsp vanilla extract
For the Royal Icing:
- 3 cups powdered sugar
- 2 tbsp meringue powder
- 4-6 tbsp water
- Black gel food coloring
Instructions:
- Prepare the Cookie Dough:
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet mixture until a soft dough forms. Wrap the dough in plastic wrap and chill for 30 minutes.
- Cut Out the Ghost Shapes:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll out the dough to 1/4-inch thickness. Use a ghost-shaped cookie cutter to cut out cookies and place them on the baking sheet.
- Bake for 8-10 minutes, or until the edges are slightly golden. Cool on a wire rack.
- Prepare the Royal Icing:
- In a large bowl, whisk powdered sugar and meringue powder.
- Gradually add water until you reach a smooth, pipeable consistency. Divide the icing into two portions, keeping one white and tinting the other black with gel food coloring.
- Transfer the white and black icing to separate piping bags.
- Decorate the Cookies:
- Using the white royal icing, pipe over the entire ghost shape and allow it to set. Once dry, pipe small black dots for the eyes and a dot for the nose.
- Allow the cookies to fully harden before serving or storing.
