These Cinnamon Roll Sandwich Cookies are soft, buttery cinnamon sugar cookies filled with a thick swirl of creamy vanilla frosting. They have all the cozy cinnamon roll flavor you love, but in an adorable little sandwich cookie!

The cookies are rolled in cinnamon sugar before baking, giving them a sweet cinnamon coating and a warm bakery-style flavor. Once they’re completely cooled, vanilla frosting is piped between two cookies to create the easiest cinnamon roll-inspired dessert.

Cinnamon Roll Sandwich Cookies

Prep Time: 20 minutes
Bake Time: 8–10 minutes
Servings: About 18–20 sandwich cookies

Ingredients

For the Cookies

  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • Pinch of salt

Cinnamon Sugar

  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon

For the Filling

  • 1 container vanilla frosting

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  3. Add the egg and vanilla and mix until well combined.
  4. In a separate bowl, whisk together the flour, cinnamon, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing just until a soft cookie dough forms.
  6. Lightly flour your work surface and roll the cookie dough out to approximately 1/4-inch thick.
  7. Use a small 1-inch scalloped round cookie cutter to cut circles from the dough.
  8. Carefully transfer the cookies to the prepared baking sheet.
  9. Combine the granulated sugar and cinnamon in a small bowl. Lightly sprinkle the tops of the cookies with cinnamon sugar before baking.
  10. Bake for 7–9 minutes, or until the cookies are set. Avoid overbaking so the cookies stay soft and tender.
  11. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. Cool completely.
  12. Spoon the vanilla frosting into a piping bag fitted with a round or star tip.
  13. Turn half of the cookies over and pipe a generous swirl of vanilla frosting onto the flat side.
  14. Top with a second scalloped cookie and gently press together to make a sandwich.
  15. For an extra cinnamon roll look, drizzle a little thinned vanilla frosting over the tops of the finished cookies and sprinkle with cinnamon.

Make Them Look Like Cinnamon Rolls

For an extra cute finishing touch, drizzle a little vanilla frosting over the tops of the finished sandwich cookies.

Simply warm a spoonful of vanilla frosting for a few seconds until it’s thin enough to drizzle. Use a spoon or piping bag to make thin lines across the tops.

You can also pipe the frosting in a spiral before adding the top cookie so the filling looks like the swirl of a cinnamon roll.

Tips for the Best Cinnamon Roll Sandwich Cookies

Keep the cookies small. Smaller cookies work especially well for sandwich cookies because you’ll be stacking two cookies together with frosting.

Don’t overbake them. Pull the cookies from the oven when the centers are set but still look soft. They’ll continue to firm up as they cool.

Cool completely before frosting. Warm cookies will melt the vanilla frosting.

Match your cookies before filling them. Pair cookies that are approximately the same size before you begin piping the frosting.

Be generous with the filling. Pipe enough frosting that you can see a pretty layer around the edge after adding the second cookie.

Homemade Frosting Option

Store-bought vanilla frosting makes these cookies especially quick and easy, but homemade vanilla buttercream or cream cheese frosting would also be delicious.

For an even stronger cinnamon roll flavor, cream cheese frosting is my favorite option. The slightly tangy frosting tastes especially good with the sweet cinnamon sugar cookies.

How to Store Cinnamon Roll Sandwich Cookies

Store the finished cookies in an airtight container for up to 3 days.

If you’re using cream cheese frosting, keep the cookies refrigerated and let them sit at room temperature for a few minutes before serving.

You can also bake the cookies ahead of time and freeze them without the frosting. Once you’re ready to serve them, thaw the cookies completely and add the filling.
