Slow Cooker Buffalo Chicken Dip

This Slow Cooker Buffalo Chicken Dip is creamy, cheesy, a little spicy, and incredibly easy to make! Using leftover rotisserie chicken makes this recipe even easier—just add everything to the slow cooker and let it get warm, melty, and delicious.

This is one of those appetizers that’s perfect for game day, football parties, holidays, potlucks, or anytime you need an easy party dip. Serve it straight from the slow cooker with tortilla chips, crackers, celery, carrots, or toasted bread.

Leftover Rotisserie Chicken Makes This So Easy

Using leftover rotisserie chicken is my favorite shortcut for this recipe.

The chicken is already cooked and flavorful, so there’s no need to cook chicken specifically for the dip. Simply remove the meat from the bones, shred or chop it into small pieces, and add it right to the slow cooker.

It’s also a great way to use up the last few cups of chicken when you don’t have quite enough left for another complete dinner.

How Spicy Is Buffalo Chicken Dip?

You can easily adjust the heat depending on the buffalo sauce you use and how spicy you like your dip.

For a milder dip, start with a little less buffalo sauce. If your family loves spicy food, add additional buffalo sauce or drizzle some over the top just before serving.

The cream cheese, ranch, and shredded cheese help balance the heat and make the dip extra creamy.

Slow Cooker Buffalo Chicken Dip

Prep Time: 10 minutes
Cook Time: 1 1/2–2 hours
Servings: 8–10

Ingredients

  • 3 cups cooked rotisserie chicken, shredded or finely chopped
  • 8 ounces cream cheese, softened and cut into cubes
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon garlic powder
  • 2 green onions, sliced, optional
  • Additional shredded cheese for topping, optional

Instructions

  1. Lightly spray the inside of the slow cooker with nonstick cooking spray.
  2. Add the shredded leftover rotisserie chicken, cream cheese, buffalo sauce, ranch dressing, cheddar cheese, mozzarella cheese, and garlic powder to the slow cooker.
  3. Stir everything together as well as possible. The cream cheese will become easier to combine as it warms.
  4. Cover and cook on LOW for 1 1/2–2 hours, stirring occasionally, until the cream cheese has melted and the dip is hot and creamy.
  5. Stir well until all of the ingredients are completely combined.
  6. If desired, sprinkle additional shredded cheddar cheese over the top. Cover for another 10–15 minutes, or until the cheese has melted.
  7. Top with sliced green onions and an extra drizzle of buffalo sauce, if desired.
  8. Turn the slow cooker to WARM and serve.

What to Serve with Buffalo Chicken Dip

One of the best things about buffalo chicken dip is all the different ways you can serve it. Put the slow cooker in the center of the table and surround it with plenty of dippers.

Try serving it with:

  • Tortilla chips
  • Crackers
  • Celery sticks
  • Carrot sticks
  • Bell pepper strips
  • Pretzel crisps
  • Toasted baguette slices
  • Pita chips

For parties, I like offering both chips and fresh vegetables so everyone can choose their favorite.

Can I Make Buffalo Chicken Dip Ahead of Time?

Yes!

Combine the ingredients in the slow cooker insert, cover, and refrigerate until you’re ready to cook. When it’s party time, place the insert in the slow cooker and cook until everything is hot and melted.

If the slow cooker insert is very cold, allow a little additional cooking time and follow the manufacturer’s guidance for your particular slow cooker.

Keep It Warm for Parties

This is exactly the kind of recipe slow cookers were made for.

Once the dip is completely melted and hot, switch the slow cooker to the WARM setting. Give the dip a stir occasionally while you’re serving it.

If it becomes thicker as it sits, stir in a small splash of milk or a little additional ranch dressing until it’s creamy again.

How to Store Leftover Buffalo Chicken Dip

Store leftover dip in an airtight container in the refrigerator for up to 3–4 days.

Reheat individual servings in the microwave, or warm a larger amount slowly on the stovetop or in the slow cooker until heated through.

Easy Game Day Appetizer
