Pumpkin Spice Sandwich Cookies

These Pumpkin Spice Sandwich Cookies are such a cute and easy treat for fall! Soft sugar cookies are flavored with pumpkin pie spice, tinted a pretty pumpkin orange, and sandwiched together with creamy vanilla frosting.

I used a small scalloped round cookie cutter to give the cookies pretty edges. They’re only about 1 inch across, so they’re the perfect little bite-size fall cookie for Halloween parties, Thanksgiving dessert trays, or an afternoon treat with a cup of coffee.

Pretty Little Fall Cookies

I love how simple these cookies are while still looking special. The scalloped edges, pumpkin-orange color, and white vanilla frosting make them perfect for a fall cookie platter.

And although they’re called Pumpkin Spice Sandwich Cookies, you don’t need pumpkin puree to make them. The warm pumpkin pie spice gives the sugar cookie dough that classic fall flavor without changing the texture of the cookies.

Pumpkin Spice Sandwich Cookies

Prep Time: 25 minutes
Bake Time: 7–9 minutes
Servings: About 20–24 sandwich cookies

Ingredients

For the Cookies

  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Orange gel food coloring

For the Filling

  • 1 container vanilla frosting

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  3. Add the egg and vanilla extract and mix until well combined.
  4. Add a small amount of orange gel food coloring and mix until the dough reaches your desired shade of pumpkin orange.
  5. In a separate bowl, whisk together the flour, pumpkin pie spice, baking powder, and salt.
  6. Gradually add the dry ingredients to the butter mixture, mixing just until a soft cookie dough forms.
  7. Lightly flour your work surface and roll the cookie dough to approximately 1/4-inch thick.
  8. Use a small 1-inch scalloped round cookie cutter to cut out the cookies. Place them on the prepared baking sheet.
  9. Bake for 7–9 minutes, or until the cookies are set. Don’t overbake them—you want the cookies to stay soft.
  10. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  11. Allow the cookies to cool completely before adding the frosting.
  12. Add the vanilla frosting to a piping bag fitted with a round or star tip.
  13. Pipe a generous swirl of vanilla frosting onto the flat side of one cookie.
  14. Place a second cookie on top and gently press together to create a sandwich cookie.

Tips for the Best Pumpkin Spice Sandwich Cookies

Use gel food coloring. Gel coloring gives the cookies a beautiful orange color without adding too much liquid to the dough.

Don’t roll the dough too thin. About 1/4 inch works well for sandwich cookies because you want them sturdy enough to hold the frosting.

Let them cool completely. If the cookies are even slightly warm, the vanilla frosting can soften and slide out of the sandwich.

Don’t overbake. Remove the cookies when they’re set but before the edges become dark brown.

Easy Vanilla Frosting Filling

Store-bought vanilla frosting makes these cookies incredibly easy, but you can certainly use homemade buttercream if you prefer.

For an extra fall touch, sprinkle a tiny amount of pumpkin pie spice over the exposed frosting around the edges.

How to Store Pumpkin Spice Sandwich Cookies

Store the finished cookies in an airtight container at room temperature for 2–3 days. You can also keep them refrigerated if you prefer a firmer frosting filling.

If you’re making them ahead of time, bake the cookies first and store them without frosting. Assemble the sandwich cookies closer to when you’re ready to serve them.
