CHOCOLATE MINT SHORTBREAD
These Chocolate Mint Shortbread Cookies are so good, and they’re so easy to make, you will love this recipe. With just a few ingredients, you’ll have a great treat that everyone will love. You can pop these on a Cookie tray to pass around at a party, put them on a Buffet or Cookie table, or give them as a Hostess gift. No matter when you decide to serve them, they’re sure to be a hit. HERE’S WHAT YOU NEED:
1 cup of Butter – Softened to room temperature
2/3 cups of Powdered Sugar
2 Cups of Flour
1 cup of Mini Chocolate Chips
1/2 tsp of Mint extract
1 drop of Green Food Coloring Gel
HERE’S WHAT YOU DO:
In the mixing bowl of a stand mixer, place the softened Butter, and whip with the Whisk attachment until light and fluffy.
Add the Powdered Sugar, and blend on low until well mixed. Add the Mint extract, and Food Coloring, and mix until well blended, and completely green. Add the Flour about a 1/3 cup at a time, mixing between additions, until the dough is completely blended, and smooth. Add the Mini Chocolate Chips, and mix to blend.
Line a Cookie Sheet with Parchment paper, and drop the cookie dough by the teaspoonful onto the Parchment paper, and lightly smash with the back of the spoon, or fingers. Bake at 350 degrees for 18 to 20 minutes, or until the cookies are light golden brown around the edges. Remove the Cookies to a wire rack to cool completely. Serve, and Enjoy!
