Banana Rum Cream Cheesecake

This Banana Rum Cream Cheesecake is rich, creamy, and filled with the most delicious combination of sweet bananas, brown sugar, vanilla, and spiced rum. It has a buttery graham cracker crust, a thick banana cream cheesecake filling, and a beautiful topping of whipped cream and fresh banana slices.

What I really love about this recipe is that all of those warm banana rum flavors are baked right into the cheesecake. There isn’t a separate sauce to make or an extra complicated step. The butter, brown sugar, cream, bananas, vanilla, and spiced rum all go directly into the filling with the cream cheese.

Ingredients

Graham Cracker Crust

  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons butter, melted

Banana Rum Cream Cheesecake Filling

  • 3 (8-ounce) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 ripe bananas, mashed
  • 4 tablespoons butter, melted and slightly cooled
  • 1/3 cup heavy cream
  • 2 teaspoons vanilla extract
  • 3 tablespoons spiced rum

For the Top

  • Whipped cream
  • Fresh banana slices
  • A small amount of spiced rum for drizzling, optional

How to Make Banana Rum Cream Cheesecake

Prepare the Graham Cracker Crust

Preheat your oven to 325°F.

Lightly grease a 9-inch springform pan.

Add the graham cracker crumbs and granulated sugar to a bowl and stir together.

Pour in the melted butter and stir until all of the graham cracker crumbs are evenly coated.

Press the mixture firmly and evenly into the bottom of your springform pan.

Bake the crust for 8–10 minutes.

Remove it from the oven and allow it to cool slightly while you make the cheesecake filling.

Make the Banana Rum Cream Filling

Add the softened cream cheese, granulated sugar, and brown sugar to a large mixing bowl.

Beat until the mixture is smooth and creamy.

Add the mashed bananas, melted butter, heavy cream, vanilla extract, and spiced rum.

Mix until everything is smooth and well combined.

Add the eggs one at a time, mixing on low speed just until each egg disappears into the batter.

Once you add the eggs, you don’t want to beat the filling for too long. Overmixing can incorporate too much air into cheesecake batter.

Pour the filling over the prepared graham cracker crust and smooth the top.

Bake the Cheesecake

Bake at 325°F for approximately 55–65 minutes.

The cheesecake is ready when the outside is set but the center still has a slight jiggle.

Turn the oven off and crack the oven door open. Leave the cheesecake inside for about 30 minutes.

Remove it from the oven and allow it to cool completely.

Once cooled, cover and refrigerate for at least 6 hours, although I really recommend letting it chill overnight.

Cheesecake is so much better once it has had plenty of time to get completely cold and set.

Decorating the Cheesecake

Once your cheesecake is thoroughly chilled, carefully remove it from the springform pan.

Add generous swirls of whipped cream around the top.

Slice fresh bananas and arrange them around the cheesecake.

If you’d like, finish with a very light drizzle of spiced rum just before serving.

I recommend waiting until you’re ready to serve the cheesecake before adding the fresh bananas. They’ll naturally begin to brown after they’re sliced, so adding them at the last minute keeps the cheesecake looking beautiful.

Jennie’s Thoughts

I absolutely love how this cheesecake turned out. Banana desserts are already so good, but adding brown sugar, vanilla, butter, cream, and spiced rum gives the banana flavor so much more depth.

And I especially love that I don’t have to make a separate banana or rum sauce. I wanted all of those flavors inside the cheesecake, so everything goes right into the filling.

The brown sugar gives it that warm caramel-like flavor that tastes so good with banana, and the spiced rum adds something a little unexpected without taking over the entire dessert.

Make sure you use really ripe bananas. This is one of those recipes where those bananas sitting on your counter covered in brown spots are exactly what you want. They’re sweeter and have so much more banana flavor.

I also think the whipped cream and sliced bananas on top are important. They make the cheesecake look gorgeous, but they also give you that banana cream flavor in every slice.

This is definitely one of those cheesecakes I would make when I want something that looks impressive but isn’t actually difficult to put together.

Tips for Making the Best Banana Cheesecake

Use room-temperature cream cheese. Softened cream cheese blends much more easily and gives you a smooth cheesecake filling.

Choose very ripe bananas. The riper the bananas, the sweeter and stronger their flavor will be.

Cool your melted butter slightly. You don’t want piping-hot butter going directly into your cream cheese mixture.

Don’t overmix after adding the eggs. Mix each egg only until incorporated.

Give it plenty of chilling time. Six hours is good, but overnight is even better.

Add fresh bananas at the last minute. This keeps them from turning brown before you serve the cheesecake.

Can I Make Banana Rum Cheesecake Ahead of Time?

Yes! In fact, this is an excellent make-ahead dessert.

You can bake the cheesecake the day before you plan to serve it and refrigerate it overnight.

The next day, simply remove it from the springform pan and decorate it with whipped cream and fresh banana slices shortly before serving.

That makes it especially convenient for holidays and parties because the majority of the work is already finished.

How to Store Banana Rum Cream Cheesecake

Keep the cheesecake covered in the refrigerator.

Because the cheesecake contains dairy and eggs, it should remain refrigerated when you’re not serving it.

For the best presentation, store the cheesecake without the fresh banana garnish and add freshly sliced bananas to individual pieces as you serve them.
