Marinated Cheese with Italian Dressing & Garlic

A simple, savory appetizer that gets better the longer it sits!

This Marinated Cheese appetizer is pure magic in a jar. Cubes of creamy white cheddar soak up all the bold flavors of Italian dressing, garlic, and sweet pimentos — creating an easy but elegant snack that’s perfect for parties, holidays, or cozy nights in.

You can prep it ahead of time (in fact, you should), and it only gets better as the flavors mingle. I used Cabot white cheddar for its rich, sharp flavor, but you could also try Colby Jack or even Monterey Jack for a milder version. Just cube, marinate, and enjoy!

Ingredients:

  • 1 (8 oz) block Cabot white cheddar, cubed
  • ½ cup Italian dressing
  • 2 tablespoons chopped green onions
  • 2 tablespoons diced pimentos (drained)
  • 1 clove garlic, minced
  • 1 teaspoon sugar
  • ½ teaspoon crushed red pepper flakes (optional for a kick)
  • Fresh cracked black pepper, to taste
  • Optional: a few sprigs of fresh thyme or parsley for garnish

Instructions:

  1. Cube the cheese into bite-sized pieces and place them in a shallow dish or jar.
  2. In a small bowl, whisk together the Italian dressing, green onions, pimentos, garlic, sugar, red pepper flakes, and black pepper.
  3. Pour the marinade over the cheese cubes, gently stirring to coat every piece.
  4. Cover and refrigerate for at least 4 hours or overnight — the longer it sits, the better the flavor!
  5. Before serving, give everything a light stir. Serve with crackers, crusty bread, or toothpicks for easy snacking.
