In the mixing bowl of a stand mixer, place the Egg Whites; You can separate the Egg Whites yourself, or you can purchase the Egg Whites in a carton in the Dairy Section at your local market, which is what I would recommend, and what I used. It's so much easier than having to separate them, and if you accidentally get a little of the Egg Yolk in with the Whites, the Egg Whites won't whip into stiff peaks. So, buying them already separated is the best way.
Once they're in the mixing bowl, and using the Whisk Attachment, turn your mixer on about Medium High, and whip the Egg Whites until you see bubble form. Stop the mixer, and add the Sugar, a little at a time, until it's mixed in, and mix again until you see a lot of little bubbles form. Stop the mixer again, and add the Corn Starch, and add any of the Optional Ingredients that you want to at this time.
You can also add extra sugar to make the bread sweeter, about an additional 4 more Tablespoons. Turn the mixer on High speed, and whip the mixture until stiff peaks form. Turn off the mixer, and Line a baking sheet with Parchment paper, and gently turn the Cloud Bread mixture out onto the Parchment paper. You can make it in one big mound in the center of the Baking Sheet, or in a few small mounds.
Remove the bread from the oven, and allow to cool completely on the baking sheet/parchment paper. Once cooled, it's ready to serve, any way you choose. Enjoy!
