How to Make French Mashed Potatoes

  1. Boil the potatoes
Place the peeled and cut potatoes into a large pot of salted water. Bring to a boil and cook until fork-tender, about 15–20 minutes.
  2. Drain most of the water
Carefully pour off most of the water, leaving just a small amount to help keep the potatoes warm and moist.
  3. Transfer to the mixer
Add the hot potatoes to the bowl of a stand mixer fitted with the paddle attachment.
  4. Whip until smooth
Add the butter, milk, salt, and Parmesan cheese. Mix on low at first, then increase speed and whip until the potatoes are silky and smooth. Add more milk if needed to reach your desired consistency.
  5. Bake until golden
Transfer the mashed potatoes to a buttered 8×10 baking dish. Dot the top with additional butter and sprinkle with finely grated Parmesan cheese.
  6. Finish in the oven
Bake at 375°F for 20–25 minutes, or until the top is lightly golden and bubbly.
