Ingredients

For the Brownies

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup mini chocolate chips, optional

For the Marshmallow Ghosts

  • 16 large marshmallows
  • 1 container (16 ounces) white vanilla frosting
  • Black decorating icing or black food decorating gel

How to Make Marshmallow Ghost Brownies

Step 1: Make the Brownies

Preheat the oven to 350°F and line an 8 × 8-inch baking pan with parchment paper.

In a large mixing bowl, whisk together the melted butter and sugar.

Add the eggs and vanilla extract and mix until smooth.

Stir in the cocoa powder, flour, salt, and baking powder until just combined.

Fold in the mini chocolate chips if you’re using them.

Spread the batter evenly into the prepared baking pan.

Bake for approximately 25–30 minutes, or until the edges are set and a toothpick inserted near the center comes out with a few moist crumbs.

Allow the brownies to cool completely before decorating.

I think these Marshmallow Ghost Brownies turned out absolutely adorable! I especially love how the white frosting drips over the sides of the brownies and makes it look like the little marshmallow ghosts are floating in a puddle of frosting.

The faces are my favorite part. Just two little black eyes and an open mouth give each marshmallow so much personality!

I also love that these don’t require any fancy decorating skills. You’re really just making a pan of brownies, adding some frosting, and decorating a few marshmallows. It’s such an easy way to turn ordinary brownies into something special for Halloween.
