It has all those sunny piña colada-inspired flavors, but instead of being frozen, they’re served warm in a cozy mug. The combination sounds unexpected, but creamy white chocolate works beautifully with sweet coconut rum and pineapple.

This would be such a fun drink for a tropical-themed party, girls’ night, Christmas in July, holiday cocktail party, or a cold evening when you’re wishing you were somewhere warm.

Why You’ll Love This Malibu White Hot Chocolate

This isn’t just regular white hot chocolate with rum added to it. Each ingredient contributes to the tropical flavor.

The white chocolate creates a sweet and creamy base, pineapple adds a bright fruity flavor, and Malibu coconut rum gives the drink its signature coconut finish.

Then there’s the topping: fluffy whipped cream and a fresh pineapple chunk make each mug look almost like a tropical cocktail.

And the whole thing takes about 15 minutes to prepare.

Ingredients

  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup white chocolate chips
  • 1/8 cup 100% pineapple juice
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 3 ounces Malibu coconut rum
  • Whipped cream, for topping
  • Fresh pineapple chunks or wedges, for garnish

How to Make Malibu Pineapple Rum White Hot Chocolate

1. Heat the Milk and Cream

Add the whole milk and heavy cream to a medium saucepan.

Heat over medium-low heat until the mixture is hot and steaming, stirring occasionally.

Don’t let the milk boil.

2. Melt the White Chocolate

Reduce the heat to low and add the white chocolate chips.

Whisk continuously until the chocolate has completely melted into the milk and the mixture looks smooth and creamy.

3. Add the Vanilla

Stir in the vanilla and a small pinch of salt.

The salt helps balance the sweetness from the white chocolate, pineapple, and coconut rum.

4. Add the Pineapple

Remove the saucepan from the heat and allow it to cool for about a minute.

Slowly whisk in the pineapple juice.

Pineapple juice is acidic, so adding it gradually and away from direct heat reduces the chance of the dairy separating.

5. Add the Malibu Rum

Stir in the Malibu coconut rum after the hot chocolate has been removed from the heat.

Don’t boil the drink after adding the rum.

Taste the hot chocolate and add another small splash of pineapple juice if you’d like the pineapple flavor to be more pronounced.

6. Decorate and Serve

Divide the hot chocolate between two large mugs.

Add a generous swirl of whipped cream to each mug and garnish with fresh pineapple.

I especially like cutting the pineapple into a small wedge and placing it on the rim of the glass. You could also add a pineapple chunk to a cocktail pick and rest it over the whipped cream.

Serve immediately.

Jennie’s Thoughts

I love this version because the Malibu does two things at once—it turns the white hot chocolate into an adult cocktail and adds that coconut flavor that works so well with pineapple.

I wouldn’t add a bunch of extra flavors to this one. White chocolate, pineapple, coconut rum, and vanilla are enough.

And I definitely think fresh pineapple is the right garnish. A big swirl of whipped cream with a golden pineapple chunk on top immediately tells you what flavor the drink is before you even take a sip.

For photos, I’d serve this in a clear glass mug so you can see the creamy white drink and then pile the whipped cream high. A pineapple wedge on the rim would give it that tropical cocktail look.

What Does Malibu Pineapple White Hot Chocolate Taste Like?

It’s essentially a cross between white hot chocolate and a creamy tropical cocktail.

The white chocolate gives you a rich vanilla-like sweetness. Pineapple provides a little fruity tartness, and Malibu brings in coconut and rum flavors.

The result is creamy and tropical without losing the cozy feeling you expect from hot chocolate.

Why Add the Malibu Last?

It’s best to add Malibu after removing your saucepan from the heat.

Not only does this prevent you from unnecessarily cooking the rum, but it also makes it easier to control the final flavor.

Make the hot chocolate completely, remove it from the stove, add your pineapple, and then finish with the rum.

Will Pineapple Juice Curdle the Milk?

Because pineapple juice is acidic, it can cause hot dairy to separate, especially if you pour it directly into boiling milk.

That’s why this recipe uses a relatively small amount of pineapple juice and adds it after the white hot chocolate comes off the heat.

Pour it in gradually while whisking.

Once you’ve added the pineapple, don’t bring the mixture back to a boil.

Can I Make the Pineapple Flavor Stronger?

Yes, but I wouldn’t simply keep pouring pineapple juice into the drink. Too much juice can thin the hot chocolate and increase the chance that the dairy will separate.

Start with the 1/4 cup called for in the recipe and taste it.

If you want more pineapple flavor, add another tablespoon or two.

You can also add a tiny amount of pineapple extract or flavoring if you have it.

What White Chocolate Should I Use?

White chocolate chips make this recipe easy, but you can also use a good-quality white chocolate baking bar.

If using a bar, finely chop approximately 3 to 4 ounces before adding it to the warm milk.

The smaller pieces will melt more quickly and evenly.

Topping Ideas

Whipped cream and pineapple are really all this drink needs, but you can make it even more decadent with:

  • Toasted coconut
  • White chocolate curls
  • Mini marshmallows
  • Pineapple chunks
  • Maraschino cherry
  • White chocolate drizzle
  • Crushed vanilla cookies
  • Toasted coconut rim

For a true tropical cocktail presentation, add whipped cream, pineapple, and a maraschino cherry.

Make a Toasted Coconut Rim

For parties, you can give the mugs a pretty coconut rim.

Melt a small amount of white chocolate and lightly coat the rim of each mug.

Place toasted shredded coconut on a shallow plate and gently press the white-chocolate-covered rim into the coconut.

Allow it to set before adding the hot chocolate.

Can I Make It Without Heavy Cream?

Yes. Replace the 1/2 cup of heavy cream with additional whole milk.

It will be a little less rich, but the melted white chocolate will still give it a wonderfully creamy consistency.

Can I Make a Non-Alcoholic Version?

For a similar tropical drink without the rum, leave out the Malibu and add a small amount of coconut extract instead.

Start with about 1/4 teaspoon coconut extract, taste, and add more if needed.

You’ll still get that pineapple-coconut combination without the alcohol.

Making a Larger Batch

If you’re serving this at a party, you can multiply the recipe and prepare the white hot chocolate base ahead of time.

Keep the base warm over very low heat or on the WARM setting of a slow cooker.

Just before serving, remove it from direct heat and gradually whisk in the pineapple juice.

Add the Malibu at the end.

Keep whipped cream and bowls of fresh pineapple nearby so guests can top their drinks.
