Ingredients

  • 2 boneless, skinless chicken breasts

Instructions

  1. Prep the Chicken: Slice the chicken breasts into thin strips, about the size of fajita meat. Pat dry with paper towels.
  2. Season & Bread: In a shallow bowl, mix flour, salt, pepper, garlic powder, and paprika. Dredge the chicken strips in the flour mixture until evenly coated.
  3. Fry the Chicken: Heat butter and olive oil in a large skillet over medium heat. Once hot, add the chicken strips and fry until golden and crispy on both sides, about 3–4 minutes per side. Transfer to a paper towel-lined plate.
  4. Make the Sauce: In a small saucepan, heat the taco sauce with a spoonful of brown sugar over low heat until warmed and slightly thickened.
  5. Assemble the Tacos:
    • Spoon a layer of refried beans into each taco shell.
    • Add a generous layer of crispy fried chicken.
    • Drizzle with warm taco sauce.
    • Sprinkle with shredded cheese.
    • Top with fresh pico de gallo.
