Ingredients
- 12 oz. fettuccine pasta
- 1/2 cup (1 stick) unsalted butter
- 1 1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional, for extra depth of flavor)
- Fresh parsley, for garnish
Instructions
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil and cook the fettuccine until al dente according to the package instructions. Reserve ½ cup of pasta water, then drain and set aside.
Step 2: Make the Alfredo Sauce
- In a large skillet, melt the butter over medium-low heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream, stirring continuously, and let it simmer for 3-4 minutes (do not boil).
- Gradually stir in the Parmesan cheese, allowing it to melt smoothly into the sauce. Add salt, pepper, and nutmeg (if using).
Step 3: Combine & Serve
- Toss the cooked fettuccine into the sauce, coating it evenly. If the sauce is too thick, add a bit of reserved pasta water to loosen it up.
- Remove from heat and serve immediately, garnished with fresh parsley and extra Parmesan if desired.

Tips for the Best Alfredo Sauce
Use freshly grated Parmesan – Pre-shredded cheese won’t melt as smoothly and can make the sauce grainy.
Don’t overheat the sauce – Keep the heat on low to medium to prevent the cream from separating.
Save the pasta water – A splash of it helps emulsify the sauce and makes it even silkier.
Make it a meal – Add grilled chicken, shrimp, or sautéed mushrooms for a delicious variation!
