Ingredients

  • 12 oz. fettuccine pasta
  • 1/2 cup (1 stick) unsalted butter
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional, for extra depth of flavor)
  • Fresh parsley, for garnish

Instructions

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil and cook the fettuccine until al dente according to the package instructions. Reserve ½ cup of pasta water, then drain and set aside.

Step 2: Make the Alfredo Sauce

  1. In a large skillet, melt the butter over medium-low heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the heavy cream, stirring continuously, and let it simmer for 3-4 minutes (do not boil).
  4. Gradually stir in the Parmesan cheese, allowing it to melt smoothly into the sauce. Add salt, pepper, and nutmeg (if using).

Step 3: Combine & Serve

  1. Toss the cooked fettuccine into the sauce, coating it evenly. If the sauce is too thick, add a bit of reserved pasta water to loosen it up.
  2. Remove from heat and serve immediately, garnished with fresh parsley and extra Parmesan if desired.

Tips for the Best Alfredo Sauce

Use freshly grated Parmesan – Pre-shredded cheese won’t melt as smoothly and can make the sauce grainy.
Don’t overheat the sauce – Keep the heat on low to medium to prevent the cream from separating.
Save the pasta water – A splash of it helps emulsify the sauce and makes it even silkier.
Make it a meal – Add grilled chicken, shrimp, or sautéed mushrooms for a delicious variation!
