Ingredients

  • 1 cup unsalted butter, melted and slightly cooled
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups semisweet chocolate chips
  • 1 cup soft caramel sauce (store-bought or homemade)
  • Flaky sea salt, for topping

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth and glossy. Add in the eggs and vanilla, mixing until fully combined.
  3. Stir in the flour, baking soda, and salt until just combined—don’t overmix. Fold in the chocolate chips.
  4. Scoop dough into 2-tablespoon portions and place on the baking sheets, leaving space between each cookie (they’ll spread out beautifully).
  5. Bake for 9–11 minutes, until the edges are golden and the centers look slightly underdone. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  6. Once cooled slightly, spread a generous smear of caramel sauce on top of each cookie.
  7. Sprinkle each with a touch of flaky sea salt while the caramel is still soft, so it sticks perfectly.

Jennie’s Notes

These cookies are best enjoyed slightly warm—when the chocolate is still gooey and the caramel just begins to melt into the cookie top.

If you’re feeling extra indulgent, add a few chocolate chunks or drizzle even more caramel before serving. They also make an amazing dessert paired with a scoop of vanilla ice cream!

You can use homemade salted caramel (see my Homemade Salted Caramel Recipe) or your favorite store-bought brand. Just make sure it’s soft and spreadable for that perfect glossy finish.
