Ingredients:

Shortbread Crust

  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup flour

Pumpkin Pie Filling

  • 1 (15 oz.) can pumpkin puree
  • 1 1/2 cups milk
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 large eggs

Streusel Topping

  • 1/4 cup flour
  • 3 tbsp brown sugar
  • 2 tbsp butter, softened
  • 1 tsp cinnamon

Instructions:

  1. Prepare the Shortbread Crust:
    • Preheat your oven to 350°F (175°C). Grease or line an 8×8 square baking dish.
    • In a mixing bowl, combine butter, sugar, vanilla, and flour. Mix until a dough forms.
    • Press the dough evenly into the bottom of the dish and bake for 10-12 minutes, until lightly golden.
  2. Make the Pumpkin Filling:
    • In a large bowl, whisk together the pumpkin, milk, sugar, salt, cinnamon, and eggs until smooth.
    • Pour the pumpkin mixture over the baked crust.
  3. Prepare the Streusel Topping:
    • In a small bowl, mix flour, brown sugar, butter, and cinnamon until crumbly.
    • Sprinkle the streusel evenly over the pumpkin layer.
  4. Bake and Cool:
    • Bake the bars in the oven for 40-45 minutes or until the filling is set and the top is golden.
