How to Make Mini Valentine’s Cheesecakes
- Line a muffin tin with muffin liners.
- Place one Golden Oreo in the bottom of each liner and set aside.

Make the Cheesecake Filling
- In a large bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar and vanilla extract and mix until fully combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.

Color & Assemble
- Divide the cheesecake batter evenly into two bowls.
- Tint one bowl red and the other pink.
- Fold white chocolate chips into the pink cheesecake mixture.
- Transfer each color into its own piping bag (or zip-top bag with the corner snipped).
- Pipe the red cheesecake layer halfway up each muffin cup.
- Pipe the pink cheesecake layer on top.
- Sprinkle with Valentine’s Day sprinkles.

Freeze
- Place the muffin tin in the freezer for 2–3 hours, or until fully set.
How to Serve
Once frozen, remove the mini cheesecakes from the muffin tin and peel away the liners. Let them sit at room temperature for about 5–10 minutes before serving for the perfect creamy texture.
These are wonderful served just as they are, or with:
- Extra whipped cream
- Chocolate drizzle
- Fresh strawberries

Jennie’s Thoughts
These little cheesecakes might be one of my favorite Valentine’s desserts I’ve ever made. I love how soft and creamy they are, and the pink and red layers make them feel extra special without requiring any baking at all. The Golden Oreo on the bottom adds the perfect crunch, and the white chocolate chips in the pink layer are such a fun surprise.

This is the kind of dessert that looks fancy but is actually incredibly easy — my favorite kind.
These Mini Valentine’s No-Bake Cheesecakes are proof that you don’t need an oven or complicated steps to make something beautiful and delicious. They’re festive, creamy, and perfect for sharing — or keeping a few in the freezer just for yourself.
