FOR THE CRUST:
- 1 cup of Butter – softened
- 2 cups of Flour
- 1/2 cup of Powdered Sugar
FOR THE FILLING:
- 4 Eggs
- 2 cups of Sugar
- 1/3 cup of Lemon Juice
- 1/4 cup of Flour
- 1 teaspoon of Baking Powder
TOP:
- 1/2 cup of Powdered Sugar
HERE’S WHAT YOU DO:
Pre-heat the oven to 350 degrees. In a large bowl, place the Flour and Powdered Sugar, and mix well. Add the softened Butter (Not melted – softened), and using a Pastry Cutter, cut the butter into the flour mixture until it’s well blended, and pea size particles have formed. Pour the mixture into a 9 X 13 dish, and evenly press the mixture in the dish with the back of a spoon, or your fingers. Bake for 20 to 25 minutes, or until just golden brown. Remove from oven.
MAKE THE FILLING:
While the crust is cooling a little, make the filling – In a large bowl, add the Eggs, and Sugar, and mix well to blend.
Add the Lemon Juice and stir until well mixed. In a small bowl, sift together the Flour, and Baking Powder, and add to the Egg mixture, and stir until well blended.
Pour over the baked crust, and place the dish back in the oven for 20 to 25 minutes. When the filling is done, remove the dish from the oven, and cool on a wire rack. When completely cool, sprinkle with Powdered Sugar. Cut in 2 X 2 inch squares, serve, and Enjoy!
