Lavender Truffles: A Sweet Treat with a Unique Flavor Profile

If you’re looking for a unique and delicious treat, lavender truffles are the way to go! These bite-sized confections have a rich, creamy center coated in decadent white chocolate. HERE’S WHAT YOU NEED:

  • 2 cups of Vanilla Wafers – about 3/4 of the box
  • 1 Tablespoon of Butter – melted
  • 1 Tablespoon of Lavender Syrup – Monin
    1/2 cup of Eagle-brand Milk – sweetened condensed milk
  • 2 heaping Tablespoons of Powdered Sugar
  • Lavender Food Coloring Gel
  • Sugar – in a shallow dish if you choose to roll some Truffles in Sugar – see instructions
    Purple or Lavender Decorating Sugars – to sprinkle
  • 3 squares of White Chocolate Almond Bark – or melting Chocolate

HERE’S WHAT YOU DO:

Place the Vanilla Wafers in a food processor, and pulse until you have fine crumbs.  Place the Crumbs in a large mixing bowl, and add the Powdered Sugar, and stir until mixed.  Melt the Butter in the Microwave, and pour it into the Crumbs and stir well to coat the Crumbs.

Add the Lavender Syrup, and stir until completely mixed. Place the Sweetened Condensed Milk in a bowl, and add the Lavender Food Coloring Gel to the milk; add enough so that the milk is a little darker than the color of the Truffles.  Stir to blend, and pour the Milk over the Crumbs.  Stir well to blend, and you should have a dough like consistency.

Place a piece of Parchment paper on a small baking sheet, and using a small cookie Scoop, scoop out the Truffles, and roll into balls. Place the Balls/Truffles on the Parchment paper.  When all the Truffles have been rolled into balls,  you can either roll some of the Truffles in Sugar, and place them back on the baking sheet, or you can dip them all in White Chocolate.  We chose to roll some in Sugar, and dip some in chocolate. If your rolling part of them in Sugar, just roll them around in a dish of Sugar, and place them back on the baking sheet.  Place the baking sheet in the Freezer for one hour.  This will set the Truffles.

After one hour, place the White Chocolate in a microwave safe dish, and microwave just until melted – about 1 minute – stopping at 15 second intervals to stir the Chocolate until melted.  Place the melted Chocolate on the counter, and remove the Truffles from the Freezer.  Set aside the Truffles you rolled in Sugar.  Using two forks, Place the Truffle in the melted White Chocolate, and roll gently, and scoop onto Truffle if need with the second fork. 

When the Truffle is coated in White Chocolate, remove with a fork, and gently push onto the Parchment paper with the other Fork.  Sprinkle with Purple/Lavender Sugars, or Sprinkles of your choice.  Place the Truffles back in the Freezer for 30 minutes to allow the Chocolate to completely set. After 30 minutes, remove from Freezer and place in an airtight container, and place in the refrigerator until time to serve.  Serve and Enjoy!


Makes 16 -18 Truffles


NOTE:  If you can’t find the White Chocolate Almond Bark, you can use Bakers White melting Chocolate.  The Almond Bark works well, as it sets up quickly.  ALSO: If you can’t find the ‘MONIN’ brand Lavender Syrup,  you can use another brand of Syrup. You can also order it online.
