How to Make German Chocolate Brownies

Step 1: Prepare the Baking Pan

Preheat the oven to 350°F.

Line a 9×9-inch baking pan with parchment paper, leaving a little extra paper hanging over the sides. This makes it much easier to lift the brownies out of the pan once they’re finished.

Lightly grease any exposed sides of the pan.

Step 2: Mix the Butter and Sugar

In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar.

Stir until the ingredients are well blended and the mixture is smooth.

Step 3: Add the Eggs and Vanilla

Add the eggs and vanilla extract and whisk until the mixture is smooth and glossy.

Step 4: Add the Dry Ingredients

Add the cocoa powder, flour, and salt.

Stir gently until everything is combined. Be careful not to overmix the batter.

Step 5: Add the Milk

Stir in the milk until the brownie batter is thick, smooth, and chocolatey.

Step 6: Bake the Brownies

Spread the batter evenly into the prepared baking pan.

Bake for approximately 25 to 32 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.

You don’t want to overbake these brownies because the fudgy texture is what makes them so delicious.

Allow the brownies to cool completely before adding the frosting.

How to Make Homemade Coconut Pecan Frosting

The homemade coconut pecan frosting is what makes these brownies so special! It’s sweet, buttery, and filled with coconut and pecans, just like the traditional frosting on German chocolate cake.

Step 1: Combine the Ingredients

In a medium, heavy-bottomed saucepan, whisk together the milk, granulated sugar, and egg yolks until smooth.

Add the butter and a pinch of salt.

Step 2: Cook the Frosting

Place the saucepan over medium-low heat and stir constantly as the butter melts and the mixture begins to thicken.

Continue cooking for approximately 10 to 15 minutes, or until the frosting is thick enough to coat the back of a spoon.

The mixture should reach at least 160°F for egg safety. Keep the heat gentle so the eggs don’t scramble.

Step 3: Add the Coconut and Pecans

Remove the saucepan from the heat and stir in the vanilla extract, shredded coconut, and chopped pecans.

Mix until everything is well combined.

Step 4: Cool the Frosting

Allow the frosting to cool, stirring occasionally, until it becomes thick and spreadable.

The frosting will continue to thicken as it cools, so don’t rush this step.

Step 5: Frost the Brownies

Once the brownies have cooled completely, spoon the coconut pecan frosting over the top.

Spread it evenly across the brownies, making sure every corner gets plenty of that delicious topping.

Step 6: Chill and Serve

Place the frosted brownies in the refrigerator for approximately 30 to 60 minutes, or until the topping is firm enough to slice.

Lift the brownies from the pan using the parchment paper and cut into squares.

Serve and enjoy!

Jennie’s Thoughts

I have always loved German chocolate cake, but I think the coconut pecan frosting is really what makes it so special. That sweet, buttery, caramel-like topping with coconut and crunchy pecans is just so good, especially when it’s paired with rich chocolate.

So, of course, I had to try it on brownies!

For this recipe, I wanted the brownies to be really fudgy and chocolatey, with a thick layer of homemade coconut pecan frosting on top. I used cocoa powder for the brownies, which gives them a wonderful chocolate flavor without having to use special baking chocolate.

And I made the frosting with regular milk, because sometimes you just want to make something delicious with the ingredients you already have in your kitchen.

One thing I definitely recommend is letting the frosting cool and thicken before spreading it over the brownies. You want that beautiful layer of coconut and pecans sitting right on top, not running down the sides.

I also like chilling these brownies before cutting them. It makes them so much easier to slice, and you get those pretty layers of fudgy chocolate and coconut pecan frosting.

These are such a delicious dessert for holidays, family gatherings, or just a weekend when you’re in the mood to bake something special.

Tips for Making the Best German Chocolate Brownies

Don’t Overbake the Brownies

The secret to really good fudgy brownies is not overbaking them. Remove the brownies when the edges are set and a toothpick comes out with a few moist crumbs.

Let the Brownies Cool Completely

If you spread warm frosting over hot brownies, the topping can become too soft and difficult to spread evenly.

Cook the Frosting Until Thickened

The coconut pecan frosting needs time on the stovetop to develop its rich flavor and thick consistency. Stir constantly and use medium-low heat.

Use Sweetened Shredded Coconut

Sweetened shredded coconut gives the frosting its classic flavor and chewy texture.

Toast the Pecans

For an extra delicious flavor, lightly toast the pecans before stirring them into the frosting.

Chill Before Slicing

Refrigerating the brownies helps the frosting firm up and makes it easier to cut beautiful squares.
