Instructions:

  1. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs with the melted butter until the mixture is well combined and resembles wet sand.
    • Press the mixture firmly into the bottom of a 9×9-inch baking dish to form an even crust. Place the crust in the refrigerator to chill while you prepare the other layers.
  2. Make the Cheesecake Layer:
    • In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
    • If using heavy whipping cream, whip it in a separate bowl until stiff peaks form. If using Cool Whip, skip this step.
    • Gently fold the whipped cream or Cool Whip into the cream cheese mixture until fully combined.
    • Spread the cheesecake layer evenly over the chilled graham cracker crust.
  3. Add the Cherry Layer:
    • Mix 1/2 the can of cherry pir filling together with 2 cups cool whip and spoon on top of the cheesecake layer. Place in the freezer for 30 minutes then top with the remaining cherry pie filling.
  4. Chill:
    • Cover the dish and refrigerate the dessert for at least 4 hours, or overnight, to allow the layers to set and the flavors to meld together.
  5. Serve:
    • Once fully chilled, cut the Cherry Cheesecake Lush into squares and serve. Enjoy this delightful, layered dessert!
