Ingredients

Tangzhong

  • 3 tablespoons all-purpose flour
  • 1/2 cup whole milk

Cinnamon Roll Dough

  • Prepared tangzhong
  • 3/4 cup whole milk, warmed to about 105–110°F
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 6 tablespoons unsalted butter, softened
  • 3 1/2 cups all-purpose flour, plus more if needed
  • 1 teaspoon salt
  • 2 tablespoons King Arthur Baking Cake Enhancer or dough enhancer, optional

Brown Butter Cinnamon Filling

  • 10 tablespoons unsalted butter
  • 1 cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Brown Butter Cream Cheese Frosting

  • 6 tablespoons unsalted butter
  • 4 ounces cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons heavy cream or milk
  • Pinch of salt

Make the Tangzhong

Add the flour and milk to a small saucepan.

Cook over medium-low heat, whisking constantly, until the mixture becomes thick and smooth, almost like a soft pudding or paste.

This should only take a few minutes.

Remove from the heat and allow the tangzhong to cool until just warm.

Make the Cinnamon Roll Dough

Pour the warm milk into the bowl of a stand mixer. Add the yeast and a small pinch of the sugar.

Allow it to sit for about 5–10 minutes, until the yeast begins to look foamy.

Add the remaining sugar, egg, egg yolk, softened butter, cooled tangzhong, flour, salt, and optional dough enhancer.

Using the dough hook, mix on low until everything comes together.

Increase to medium-low speed and knead for about 8–10 minutes.

The finished dough should be very soft, smooth, and slightly tacky. Avoid adding too much extra flour. A softer dough will give you softer cinnamon rolls.

Transfer the dough to a lightly greased bowl and cover.

Allow it to rise in a warm place for about 60–90 minutes, or until doubled in size.

Make the Brown Butter

While the dough rises, place the butter for the filling in a light-colored saucepan over medium heat.

Allow the butter to melt.

Continue cooking, stirring or swirling frequently. The butter will foam and then begin developing little golden-brown specks along the bottom of the pan.

Once it smells nutty and toasted and the milk solids are deep golden brown, immediately remove it from the heat.

Pour the brown butter into a heat-safe bowl so it doesn’t continue cooking.

Allow it to cool until it thickens to a soft, spreadable consistency.

Make the Filling

Combine the brown sugar, cinnamon, and salt in a small bowl.

Stir the vanilla into the cooled brown butter.

Assemble the Cinnamon Rolls

Lightly flour your work surface.

Roll the risen dough into a large rectangle, approximately 14 × 18 inches.

Spread the softened brown butter evenly over the dough, leaving a small border around the edges.

Sprinkle the cinnamon brown sugar mixture generously over the butter.

Starting with one of the long sides, tightly roll the dough into a log.

Cut into 12 even rolls using unflavored dental floss or a sharp serrated knife.

Arrange the cinnamon rolls in a greased 9 × 13-inch baking dish.

Cover and allow them to rise for another 35–45 minutes, until noticeably puffy.

Bake

Preheat the oven to 350°F.

Bake the cinnamon rolls for approximately 22–27 minutes, or until the tops are lightly golden and the centers are baked through.

Allow them to cool for about 10 minutes before frosting.

Make the Brown Butter Cream Cheese Frosting

While the cinnamon rolls bake, brown the 6 tablespoons of butter using the same method as above.

Transfer the brown butter to a bowl and allow it to cool until it is no longer hot but still soft.

Beat the cream cheese until smooth.

Add the brown butter, powdered sugar, vanilla, salt, and 2 tablespoons of cream.

Beat until smooth and fluffy.

Add another tablespoon of cream if you’d like a softer frosting.

Spread generously over the warm cinnamon rolls.

The warmth from the rolls will slightly melt the frosting into all of the swirls.

The Secret to Extra-Soft Cinnamon Rolls

The biggest mistake with homemade cinnamon rolls is adding too much flour.

This dough is supposed to be soft and slightly tacky. If you keep adding flour until it feels completely dry, the baked rolls won’t have the same pillowy texture.

Tangzhong also makes a noticeable difference. Cooking a small amount of flour with milk before making the dough helps the rolls retain moisture, giving them that exceptionally tender bakery-style texture.

The optional dough enhancer makes them even softer.

Can I Make Brown Butter Cinnamon Rolls Overnight?

Yes.

Prepare and shape the cinnamon rolls, place them in the baking dish, cover tightly, and refrigerate overnight before the second rise.

The next morning, remove the pan from the refrigerator and allow the rolls to sit at room temperature until they’re noticeably puffy, usually about 45–75 minutes depending on the temperature of your kitchen.

Bake as directed.
