Ingredients
For the Cookies:
- 2 sticks (1 cup) butter, softened
- 1 cup sugar
- 1 tablespoon vanilla extract
- 1 egg
- 1 ripe banana, mashed
- 3 cups all-purpose flour
- 1 tablespoon baking powder

For the Frosting:
- 4 tablespoons butter, softened
- 4 oz cream cheese
- 4 cups powdered sugar
- Yellow food coloring gel
- Banana slices (for topping)
Instructions
Step 1: Make the Cookie Dough
- In the bowl of a stand mixer fitted with the whisk attachment, cream together butter, sugar, vanilla, and egg until light and fluffy.
- Add the mashed banana and mix until combined.
- In a separate bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet, switching to the paddle attachment once the dough thickens. Mix until a soft, smooth dough forms. Scrape the sides of the bowl as needed.

Step 2: Shape & Bake
- Line two cookie sheets with parchment paper.
- Roll the dough into 1-inch balls and place them spaced apart on the baking sheets.
- Bake at 350°F for about 15 minutes, or until cookies are just turning golden around the edges.
- Halfway through baking, gently press each cookie with the bottom of a sugar-dipped glass to slightly flatten them—this gives that perfect crinkle-top look.

Cool completely on wire racks before frosting.
Step 3: Make the Swirl Frosting
- In a clean mixing bowl, beat together the softened butter and cream cheese until smooth.
- Add the powdered sugar, a little at a time, until the frosting is fluffy and holds its shape.
- Divide the frosting into two bowls. Tint one bowl with yellow food coloring gel; leave the other white.
If needed, add an extra tablespoon of powdered sugar to thicken the frosting after adding color.

Step 4: Create the Swirl
- Tear a sheet of plastic wrap about 10 inches wide.
- Pipe or spoon two long lines of frosting—one yellow and one white—side by side onto the center of the wrap.
- Roll up the plastic wrap lengthwise, creating a log with frosting inside.
- Snip one end, then place it inside a piping bag fitted with a large star tip.
- Pipe a tall swirl of frosting onto each cooled cookie and top with a fresh banana slice.
Let frosting set for about 30 minutes.
