Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
- 1 TBSP of honey
- 3/4 cup milk
- 1 egg
- 2 tablespoons melted butter (plus more for greasing the pan)
- Powdered sugar, for dusting
- Maple syrup, for dipping

Instructions
1. Mix the Batter: In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk the milk, egg, honey, and melted butter. Pour the wet ingredients into the dry and stir just until combined — don’t overmix.
2. Heat the Pan: Warm a nonstick skillet or griddle over medium heat and lightly grease with butter.
3. Cook the Mini Pancakes: Drop the batter by teaspoons onto the hot skillet to make silver-dollar-sized pancakes. Cook for about 1–2 minutes until bubbles form on the surface, then flip and cook another 30 seconds or until golden.
4. Serve: Arrange the pancakes on a platter, dust with powdered sugar, and serve with a bowl of maple syrup for dipping.

Tips & Variations
