These Vanilla Espresso Martini Jello Shots turn one of the most popular coffee cocktails into a fun little party dessert. Made with fresh espresso, vanilla vodka, coffee liqueur, and a touch of sweetness, these sophisticated Jello shots are rich, smooth, and packed with coffee flavor.

Instead of using flavored Jello, this recipe starts with unflavored gelatin, which lets the espresso remain the star.

Ingredients

  • 1 cup freshly brewed strong espresso or very strong coffee, divided
  • 2 packets unflavored gelatin
  • 1/2 cup vanilla vodka
  • 1/2 cup coffee liqueur
  • 2 tablespoons simple syrup
  • 1 teaspoon vanilla extract
  • Coffee beans, optional, for garnish

How to Make Vanilla Espresso Martini Jello Shots

Step 1: Brew the Espresso

Prepare 1 cup of strong espresso or very strong coffee.

Divide it into two portions.

You’ll use some of the coffee to bloom the gelatin and the remaining hot espresso to dissolve it.

Step 2: Bloom the Gelatin

Pour 1/4 cup of the espresso into a medium mixing bowl and allow it to cool until it’s no longer hot.

Sprinkle 2 packets of unflavored gelatin evenly over the surface.

Let the gelatin sit for approximately 5 minutes.

It will absorb the liquid and begin to swell.

This step is called blooming the gelatin and helps it dissolve smoothly.

Step 3: Add the Hot Espresso

Heat the remaining 3/4 cup espresso until hot.

Pour it over the bloomed gelatin.

Whisk gently until the gelatin has completely dissolved.

Step 4: Add the Vanilla

Stir in 2 tablespoons simple syrup and 1 teaspoon vanilla extract.

The simple syrup balances the bitterness of the espresso, while the vanilla gives the shots a softer coffeehouse flavor.

Step 5: Add the Alcohol

Allow the espresso mixture to cool for several minutes.

Stir in:

  • 1/2 cup vanilla vodka
  • 1/2 cup coffee liqueur

Mix gently until completely combined.

Avoid adding the alcohol while the espresso is extremely hot.

Step 6: Fill the Cups

Arrange 12–16 small Jello shot cups on a tray.

Carefully divide the espresso mixture between the cups.

Fill each approximately 3/4 full.

Step 7: Chill

Transfer the tray to the refrigerator.

Chill for 3–4 hours, or until completely set.

Step 8: Garnish

Just before serving, place three coffee beans on top of each Jello shot for the classic espresso martini presentation.

Keep refrigerated until serving.

What Do Vanilla Espresso Martini Jello Shots Taste Like?

Imagine a sweet vanilla espresso martini transformed into Jello.

The first flavor you get is rich coffee.

Then comes the sweet coffee liqueur and smooth vanilla.

Why Use Unflavored Gelatin?

There’s no reason to introduce a fruit-flavored gelatin into an espresso martini.

Unflavored gelatin allows us to create the exact cocktail flavor we want.

You get:

Espresso + vanilla + coffee liqueur + vodka.

That’s it.

It also gives these shots a beautiful glossy espresso-brown color.

I absolutely love the idea of turning an espresso martini into a Jello shot.

And once I decided to make one, vanilla seemed like the perfect way to make it a little different.

I didn’t want these to taste like sweet coffee-flavored Jello.

I wanted them to taste like an actual espresso martini.

That’s why we’re using real espresso.

The vanilla vodka adds just enough sweetness and warmth, and the coffee liqueur gives you that deep coffee cocktail flavor.

But my favorite part might be the three coffee beans on top.

It’s such a tiny detail, but the minute you add them, everyone knows exactly what these are supposed to be.

They’re dark, glossy, elegant, and honestly one of the prettiest Jello shots to put on a cocktail tray.

Why Three Coffee Beans on an Espresso Martini?

Espresso martinis are traditionally garnished with three coffee beans.

The three-bean garnish is commonly associated with health, wealth, and happiness.

You don’t have to garnish your Jello shots this way, but I love how instantly recognizable it makes them.

Just make sure guests know the coffee beans are primarily a garnish.

Can I Use Strong Coffee Instead of Espresso?

Yes.

If you don’t have an espresso machine, brew very strong coffee instead.

You can also use strongly prepared instant espresso.

The important thing is making sure the coffee has enough flavor to stand up to the vodka and coffee liqueur.

Regular weak coffee will make the finished shots taste watered down.

Can I Use Cold Brew?

Yes, but you’ll still need some heat to dissolve the gelatin.

You can bloom the gelatin in cold brew and then gently heat another portion before combining everything.

Cold brew gives the shots an especially smooth coffee flavor because it tends to be less bitter than traditional brewed coffee.

Can I Use Regular Vodka?

Absolutely.

Regular vodka will give you a more traditional espresso martini flavor.

If you use plain vodka, you can increase the vanilla extract slightly or add a little vanilla simple syrup.

Make Them Extra Vanilla

For an even stronger vanilla flavor, replace the regular simple syrup with vanilla simple syrup.

Then you have vanilla coming from both the vodka and the syrup.

You can also use vanilla bean paste in place of vanilla extract.

A little goes a long way.

Can I Use Baileys?

You can make a creamy variation by replacing some of the coffee liqueur with Irish cream.

For example, use:

  • 1/2 cup vanilla vodka
  • 1/4 cup coffee liqueur
  • 1/4 cup Irish cream

This creates a softer, creamier coffee Jello shot.

It won’t taste quite as much like a classic espresso martini, but it will be delicious.

Make Salted Caramel Espresso Martini Jello Shots

Replace the vanilla vodka with caramel vodka and add a tiny pinch of flaky salt.

You could also drizzle a very small amount of caramel around the serving cups immediately before serving.

Now you have Salted Caramel Espresso Martini Jello Shots.

Make Chocolate Espresso Martini Jello Shots

Add a little chocolate liqueur to the mixture.

Replace 1/4 cup of the coffee liqueur with chocolate liqueur for a mocha-inspired version.

This recipe contains a total of 1 cup of alcohol divided among approximately 12–16 servings.

Remember that Jello shots aren’t the same size or strength as standard cocktail shots.

Because they’re sweet and easy to eat, serve them responsibly and make sure they’re clearly identified as containing alcohol.
