  • 1 large package (6 ounces) Jello Cheesecake Pudding
  • 1 cup Milk
  • 1 cup RumChata
  • 2 packages Biscoff Cookies
  • Redi-Whip Whipped Cream, for topping
  • Caramel Topping, for drizzling
  • 12 tall Shot Glasses

  1. Prepare the Pudding Mixture:
    • Start by placing the pudding mix in the mixing bowl of a stand mixer. Add the milk and Rum Chata, then blend on low speed until mixed.
    • Increase the mixer speed to medium-high and mix for about 1 minute, or until the pudding has thickened to a creamy consistency.
  2. Crush the Biscoff Cookies:
    • In a blender or food processor, crush one package of Biscoff cookies until they form fine crumbs.
    • Add half of the cookie crumbs to the pudding mixture in the stand mixer and blend until well mixed.
  3. Assemble the Jello Shots:
    • Place the remaining half of the cookie crumbs in the bottom of each shot glass, adding about a heaping teaspoon of crumbs to each glass.
    • Spoon the pudding mixture over the cookie crumbs in the shot glasses, filling them to the top.
    • Refrigerate the shot glasses until you’re ready to serve.
  4. Top and Serve:
    • Just before serving, remove the shot glasses from the refrigerator.
    • Add a generous dollop of Redi-Whip whipped cream on top of each shot glass.
    • Drizzle caramel topping over the whipped cream, allowing it to cascade down the sides of the glasses.
    • Break about 10 of the remaining Biscoff cookies in half and place half of a cookie in each shot glass.
    • Serve the RumChata Biscoff Cheesecake Jello Shots with additional cookies on the side for dipping and indulging.
