Ingredients:

For the Carrot Cake Loaf:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 2 large eggs
  • ½ cup vegetable oil
  • ¼ cup milk (or buttermilk)
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated carrots
  • ½ cup chopped walnuts or pecans (optional)

For the Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, brown sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together eggs, oil, milk, and vanilla until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the grated carrots and chopped nuts (if using). Do not overmix.
  6. Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Make the cream cheese frosting: In a mixing bowl, beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla and mix until creamy.
  9. Once the loaf is completely cool, spread the frosting over the top.
  10. Slice and enjoy!
