Chocolate Chipless Cookies

Instead of mixing chocolate chips into the dough, we take a unique approach—baking the cookies without the chips and then dipping the bottoms in melted chocolate.

This method creates a smooth, buttery cookie with a rich chocolate coating, offering the perfect balance of flavor and texture.

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet or milk chocolate, melted (for dipping)

Instructions:

  1. Preheat and Prep – Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the Dough – In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Dry Ingredients – In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  4. Scoop and Bake – Use a cookie scoop or spoon to portion the dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are golden brown.
  5. Cool the Cookies – Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  6. Melt and Dip – In a microwave-safe bowl, melt the chocolate in 20-second intervals, stirring in between, until smooth. Dip the bottom of each cooled cookie into the melted chocolate and place them on parchment paper to set.
  7. Enjoy! – Let the chocolate harden before serving, or place the cookies in the refrigerator for a quicker setting time.
