These snowman cookie recipe & snowflake cookie recipe are so cute!  Perfect for a holiday party, a gift basket, or tucked into a stocking.  Cute little snowman faces and bright aqua snowflakes will put you in a winter mood and wanting a hot cup of cocoa to go along with your cookies, and the sweet Royal Icing tastes like it came from a professional bakery.  Everyone is sure to love these, and they’ll love you for making them!


HERE’S WHAT YOU NEED:

COOKIES:

  • 1 cup of Butter – softened
  • 1 cup of Sugar
    1 Egg
  • 2 teaspoons of Vanilla
  • 2 1/2 cups of Flour
    1 teaspoon of Salt

ROYAL ICING:

  • 3/4 cups of Warm Water
  • 1/3 cup of Meringue Powder (I used Wilton)
  • 2 – 16 ounce bags of Powdered Sugar

1 1/2 Tablespoons of Karo Syrup
FOOD COLORING GEL:

  • Black
  • Orange
  • Aqua
    4 plastic pastry or icing bags
  • 2″ round cookie cutter

HERE’S WHAT YOU DO:
In the mixing bowl of a Stand Mixer, add the Butter, Sugar, and Egg, and blend with the Whisk attachment until smooth, and creamy.  Add the Vanilla, and mix until blended.  In a separate bowl, add the Flour, and Salt, and mix well to blend.  Add the Flour mixture to the mixing bowl, and mix until blended, and smooth. Place a large piece of Parchment paper on the Kitchen Counter, and sprinkle with Flour.  Place half of the Cookie dough on the Parchment paper, and with a Floured Rolling Pin, roll the Dough to 1/2 inch thickness. Cut out each circle, and place on a Parchment paper lined Cookie Sheet. Bake at 350 degrees for 10 to 12 minutes, or until Cookies begin to turn golden brown around the edges. Remove from the oven to a wire rack, and cool completely.


ROYAL ICING:

In the mixing bowl of a Stand Mixer, place the Warm Water, Meringue Powder, and Karo Syrup, and blend with the Whisk attachment until completely blended and smooth.  Add the Powdered Sugar, about 2 cups at a time, and mix on low, until all the Powdered Sugar has been added.  Scrape down the sides of the Mixing Bowl as needed, and blend until the Icing is smooth and creamy.  In three bowls, place about 1/3 of the Icing in each bowl, and gather gel food coloring.  In one of the bowls, add several drops of Black Food Coloring Gel, until you have the desired color of Icing.  In the other bowl, add a couple drops of aqua Food Coloring Gel, and stir well.  In the third bowl, add orange gel colors. Place each color of icing in a pastry bag and set aside. Divide your baked cookies in half, so you decorate a batch of snowmen and a batch of snowflake.

Begin by piping the white Icing around the outside of the Cookies, and then fill in the center. Let dry and then start filling the aqua cookies, aqua around the edge and fill the center, let dry for 20 minutes. Next, take your black icing and draw two eyes and a smile for the snowman’s face. Next, take the orange icing and draw on his nose, repeat until all of the snowmans faces are finished. Then, take the white icing and draw an “X” on top of the aqua cookie and then draw another”X” to make the snowflake lines and then draw smaller lines to make the intricate part of the snowman.
