Ingredients

For the Pistachio Cupcakes

  • 1 1/4 cups all-purpose flour
  • 1 package (3.4 ounces) instant pistachio pudding mix, dry
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract, optional
  • 1/2 cup whole milk
  • 1/4 cup sour cream
  • A few drops green food coloring, optional

For the Topping

  • 1 container (8 ounces) Cool Whip, thawed
  • 1/2 cup finely chopped or crushed pistachios

How to Make Homemade Pistachio Cupcakes

Step 1: Preheat the Oven

Preheat your oven to 350°F.

Line a standard 12-cup muffin pan with cupcake liners and set aside.

Step 2: Combine the Dry Ingredients

In a medium mixing bowl, whisk together the flour, dry instant pistachio pudding mix, baking powder, baking soda, and salt.

Set aside.

Important: Do not prepare the pudding according to the package directions. Add the dry pudding powder directly to the cupcake batter.

Step 3: Cream the Butter and Sugar

In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer for approximately 2–3 minutes, until light and fluffy.

This helps create soft, tender cupcakes.

Step 4: Add the Eggs and Flavoring

Add the eggs one at a time, mixing well after each addition.

Mix in the vanilla extract and almond extract, if using.

Step 5: Add the Milk and Sour Cream

In a small bowl, stir together the milk and sour cream until combined.

Alternately add the dry ingredients and milk mixture to the butter mixture, beginning and ending with the dry ingredients.

Mix on low speed just until combined.

Avoid overmixing, which can make the cupcakes dense.

Step 6: Add Green Food Coloring

The pistachio pudding mix naturally gives the batter a green color.

If you’d like a deeper green cupcake, add a few drops of green food coloring and gently stir until the color is evenly distributed.

Step 7: Fill the Cupcake Liners

Divide the batter evenly between the 12 prepared cupcake liners, filling each approximately two-thirds full.

Step 8: Bake

Bake at 350°F for approximately 18–22 minutes, or until the tops spring back lightly when touched and a toothpick inserted into the center comes out clean or with a few moist crumbs.

Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack.

Cool completely before decorating.

Step 9: Frost with Cool Whip

Once the cupcakes are completely cool, transfer the thawed Cool Whip to a piping bag fitted with a large round or star tip.

Pipe a generous swirl of Cool Whip onto each cupcake.

You can also spread the Cool Whip over the cupcakes with a small offset spatula for a smooth, simple finish.

Step 10: Decorate with Crushed Pistachios

Place the finely chopped pistachios in a shallow bowl or on a small plate.

Carefully dip or roll the outer edges of the Cool Whip frosting into the crushed pistachios, creating a pretty ring around the frosting.

Keep the center of the frosting white for a beautiful contrast against the green cupcake and crushed pistachios.

Refrigerate until ready to serve.

Jennie’s Thoughts

I absolutely love pistachio desserts, and these homemade Pistachio Cupcakes turned out so pretty!

I wanted to make a pistachio cupcake completely from scratch, but I also wanted that delicious pistachio pudding flavor and the beautiful green color that comes from adding instant pudding mix to the batter.

The cupcakes are a lovely green color, and I think that makes them especially pretty for spring, Easter, or even Christmas.

Instead of making a heavy buttercream frosting, I decided to top them with Cool Whip. I love how light and fluffy it looks against the green cupcakes!

Then I dipped the edges of the Cool Whip into crushed pistachios, which gave them such a pretty finish. The pistachios add a little crunch and make the cupcakes look extra special without requiring complicated decorating.

I think these would be absolutely beautiful served on a white cake stand for a spring brunch, Easter dessert table, or afternoon gathering.

They’re simple, pretty, and such a delicious way to enjoy pistachio flavor!

Tips for Making the Best Pistachio Cupcakes

Use instant pistachio pudding. Make sure you’re using instant pudding mix rather than cook-and-serve pudding. The dry mix is added directly to the batter.

Don’t overmix the batter. Mix just until the ingredients are combined to keep the cupcakes tender.

Use room-temperature ingredients. Softened butter, room-temperature eggs, and milk help the batter combine smoothly.

Don’t overbake. Pistachio cupcakes should be soft and moist. Begin checking them around 18 minutes.

Cool completely before frosting. Cool Whip will melt and lose its shape if added to warm cupcakes.

Chop the pistachios finely. Small pieces adhere to the Cool Whip more easily and create a prettier decorative edge.

Keep refrigerated. Because these cupcakes are topped with Cool Whip, they should be stored in the refrigerator.

How to Decorate Pistachio Cupcakes with Cool Whip

One of my favorite things about these cupcakes is how easy they are to decorate!

You don’t need to make complicated homemade frosting or spend a lot of time piping elaborate designs.

Simply add a generous swirl of Cool Whip to the top of each cupcake and gently dip the edges into finely chopped pistachios.

The combination of the green cupcake, fluffy white topping, and crushed green pistachios creates a beautiful, elegant dessert.

For a different look, you can pipe the Cool Whip into a smooth, rounded mound and sprinkle the pistachios around the outside edge.

I especially love leaving the center white because it gives the cupcakes a clean, pretty bakery-style appearance.

Pistachio Cupcakes with White Chocolate

Drizzle melted white chocolate over the Cool Whip and sprinkle with crushed pistachios just before serving.

Pistachio Almond Cupcakes

Pistachio Cupcakes with Pistachio Buttercream

For a richer pistachio dessert, replace the Cool Whip with homemade pistachio buttercream.

How to Store Pistachio Cupcakes

Because these cupcakes are topped with Cool Whip, they should be refrigerated.

Place the decorated cupcakes in an airtight container or covered cupcake carrier and refrigerate for up to 3 days.

For the prettiest appearance, add the crushed pistachios shortly before serving if you’re preparing the cupcakes ahead of time.

The cupcake bases can also be baked ahead and frozen without frosting for up to 2 months. Thaw completely before decorating.

Can You Make Pistachio Cupcakes Ahead of Time?

Yes!

You can bake the pistachio cupcakes one day in advance and store the unfrosted cupcakes in an airtight container.

When you’re ready to serve, pipe the Cool Whip onto the cupcakes and decorate the edges with crushed pistachios.

If you’re making these for a party or holiday gathering, I recommend decorating them the same day for the freshest appearance.

Frequently Asked Questions

Can I add instant pistachio pudding to homemade cupcake batter?

Yes! Instant pistachio pudding mix adds flavor, sweetness, and moisture to homemade cupcakes. It also gives the batter a lovely green color.

Do I prepare the pudding before adding it to the cupcakes?

No. Add the dry instant pudding mix directly to the batter. Do not prepare it with milk first.

Why are pistachio cupcakes green?

The green color typically comes from the pistachio pudding mix, which contains added coloring. You can add a little green food coloring if you’d like a deeper shade.

Can I use Cool Whip instead of buttercream frosting?

Absolutely! Cool Whip is a delicious, light topping for cupcakes. However, it must be kept refrigerated and won’t hold its shape as long as traditional buttercream at room temperature.

Can I use homemade whipped cream instead?

Yes. Stabilized homemade whipped cream is a wonderful alternative if you prefer a homemade topping.

Can I make these without almond extract?

Yes! Almond extract is optional. The pistachio pudding mix provides plenty of flavor on its own.

Are these cupcakes good for Easter?

Definitely! Their beautiful green color, fluffy white topping, and crushed pistachio garnish make them a wonderful dessert for Easter, spring brunches, and garden parties.
