3-Layer Strawberry Cake

Ingredients:

For the Cake:

  • 1 cup butter (softened)
  • 2 cups sugar
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 tbsp strawberry flavoring
  • 3 1/4 cups flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups milk
  • 1 tbsp strawberry Jello powder
  • 2-3 drops red or pink gel food coloring

For the Buttercream Frosting:

  • 1 1/2 cups butter (softened)
  • 5 cups powdered sugar
  • 1 tbsp strawberry flavoring
  • 2-3 tbsp heavy cream or milk
  • 2-3 drops red or pink gel food coloring

Instructions:

For the Cake:

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans. Line the bottoms with parchment paper for easy removal.
  2. In a large mixing bowl, cream together the butter, sugar, and vegetable oil until light and fluffy.
  3. Add in the eggs, one at a time, mixing well after each addition. Stir in the strawberry flavoring.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, and mix until combined.
  6. Stir in the strawberry Jello powder and food coloring until the batter reaches your desired pink hue.
  7. Divide the batter evenly among the three prepared cake pans and smooth out the tops.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

For the Buttercream Frosting:

  1. In a large bowl, beat the softened butter until smooth and creamy.
  2. Gradually add in the powdered sugar, mixing well after each addition.
  3. Stir in the strawberry flavoring and 2 tablespoons of heavy cream or milk.
  4. Add the food coloring and mix until the frosting is light, fluffy, and evenly tinted. If needed, add an extra tablespoon of cream to reach your desired consistency.

To Assemble the Cake:

  1. Place the first cake layer on a cake stand and spread a generous amount of frosting on top.
  2. Add the second layer and repeat the process.
  3. Place the third layer on top and frost the entire cake with a thin crumb coat. Chill for 15-20 minutes.
  4. Apply a final layer of frosting and smooth it out with an offset spatula.
  5. Decorate with fresh strawberries, sprinkles, or a drizzle of white chocolate for an extra touch!
