Ingredients:

For the Peach Filling:

  • 6–7 fresh peaches, peeled and sliced (or about 5 cups frozen/thawed peach slices)
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (or all-purpose flour)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract (optional)

For the Crisp Topping:

  • 3/4 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed

Instructions:

1. Preheat the Oven

Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish or similar-sized pan.

2. Make the Peach Filling

In a large bowl, toss the sliced peaches with sugar, lemon juice, cinnamon, cornstarch, and vanilla (if using). Pour the mixture into the prepared baking dish and spread it out evenly.

3. Make the Crisp Topping

In another bowl, combine oats, flour, both sugars, cinnamon, and salt. Add the cold, cubed butter and use a pastry cutter or your fingertips to mix until the mixture forms coarse crumbs.

4. Assemble and Bake

Sprinkle the topping evenly over the peaches. Bake for 35–40 minutes, or until the topping is golden and the filling is bubbling around the edges.

5. Cool Slightly & Serve
