Frito Taco Bake
If you love Taco’s, and you love Frito pie, you’re going to love this Frito Taco Bake recipe. It combines mild spicy Taco meat, with Fritos, beans, onions, cheese, and sweet enchilada sauce, baked in the oven until it’s bubbly, and it is just delicious. Make sure you keep this recipe handy, because everyone is going to love it, it’s easy, and a great go to for anytime you want something fabulous without all the fuss.

INGREDIENTS:
FOR THE TACO MEAT:
- 1 1/2 – 2 pounds of Ground Sirloin
- Coarse ground Garlic Salt and Parsley – to taste
- Seasoned salt – to taste
- Garlic Powder – to taste
- 1 sweet onion – chopped
- 1/2 a jar of PACE brand Salsa – mild
- 1 Tablespoon of Taco seasoning – I used Williams Brand
- 1 Tablespoon of ground Cumin
- 1 cup of Ketchup
- Water
TO LAYER IN THE DISH:
- 1 can of Ranch beans – drained and rinsed
- 1/2 chopped onion
- 1 large bag of Fritos
- 1 8 ounce brick of White Cheddar Cheese – grated
- 1 can of Old El Paso mild Enchilada Sauce
- 1/4 cup of Brown Sugar
INSTRUCTIONS:
In a large Skillet, brown the ground sirloin until completely done, no pink is visible, and the meat is well done. Drain fat from the meat with paper towels. Sprinkle the meat with Garlic Salt, Seasoned Salt, and Garlic Powder, stir well. Add 1/2 of a chopped sweet onion and let simmer on low heat until the onion is tender. Sprinkle the meat and onion with the Taco Seasoning, and Cumin. Add the Salsa, and Ketchup, and stir well. Let simmer for about 5 minutes on medium low heat. Add about 1/3 cup of water and stir.Â
In an 8 X 11 casserole dish, place a Tablespoon of softened Butter, and brush the bottom and sides of the dish. Place a generous layer of Fritos in the bottom of the dish. Spoon the Taco meat over the Fritos and spread evenly in the dish. Add the drained and rinsed Beans on top of the Taco meat and spread evenly. Add the other half of the chopped onion on top of the beans. Add more Fritos generously to the dish and add the grated/shredded Cheese on top of the Fritos.Â
In a large bowl, add the Enchilada Sauce, and add the Brown sugar to the Enchilada sauce and stir well to mix. Spoon or pour the Enchilada Sauce evenly over the top of the Cheese.
Place in the oven at 375 for 20 to 30 minutes, or until the cheese is melted and bubbly, and the ingredients are heated through. Remove from the oven, serve, and enjoy!
Makes 6 servings.
NOTE: Can be served with chopped tomatoes, chopped onion, side salad, Tortilla chips, Fritos, shredded cheese, salsa, sour cream, or your favorite toppings.
