Ingredients:

  • Crust:
    • 2 cups graham cracker crumbs
    • 1/2 cup unsalted butter, melted
    • 1/4 cup granulated sugar
  • Cheesecake Filling:
    • 2 packages (8 oz each) cream cheese, softened
    • 1 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 2 large eggs
    • Orange and yellow gel food coloring
    • 2 tbsp Monin Candy corn syrup – you can find this on amazon
  • Topping:
    • Candy corn for garnish

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 325°F (163°C).
    • Line a 9×9-inch baking pan with parchment paper, leaving an overhang on the sides to lift the bars out easily.
    • In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar.
    • Press the mixture firmly into the bottom of the prepared baking pan.
    • Bake for 10 minutes, then remove from the oven and set aside to cool.
  2. Make the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
    • Add the vanilla extract and candy corn syrup mix until well combined.
    • Add the eggs one at a time, beating after each addition just until combined.
    • Divide the batter evenly into three separate bowls.
    • Leave one bowl plain (white layer), add a few drops of yellow gel food coloring to the second bowl, and orange gel food coloring to the third bowl, mixing each until the desired colors are achieved.
  3. Layer the Cheesecake:
    • Pour the yellow batter over the cooled crust and spread it evenly.
    • Carefully pour the orange batter over the yellow layer and spread it evenly.
    • Finish with the plain (white) batter on top, spreading it evenly.
  4. Bake the Cheesecake Bars:
    • Bake for 35-40 minutes or until the center is set and no longer jiggly.
    • Turn off the oven and let the bars cool in the oven with the door slightly open for 1 hour.
    • Remove from the oven and let them cool completely at room temperature.
    • Refrigerate for at least 4 hours, preferably overnight.
