- ⅓ cup light brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon salt
- 1 cup Ghirardelli milk chocolate chips
- 1 cup Cadbury Mini Eggs, crushed
For the Robin’s Egg Buttercream:
- ½ cup (1 stick) unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons heavy cream or milk
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- Sky blue food coloring
- 1 teaspoon cocoa powder + 1 teaspoon water (for speckling effect)
Instructions
Step 1: Make the Blondies
1️⃣ Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
2️⃣ In a mixing bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
3️⃣ Add the eggs and vanilla extract, whisking until fully combined.
4️⃣ Stir in the flour and salt until just incorporated—don’t overmix!
5️⃣ Fold in the chocolate chips and crushed Cadbury Mini Eggs.
6️⃣ Spread the batter evenly into the prepared pan and bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted comes out with a few moist crumbs.
7️⃣ Let the blondies cool completely before frosting.
Step 2: Make the Robin’s Egg Buttercream
1️⃣ In a mixing bowl, beat butter until creamy and smooth.
2️⃣ Gradually add powdered sugar, beating until fluffy.
3️⃣ Add heavy cream, vanilla extract, and salt, mixing until well combined.
4️⃣ Mix in sky blue food coloring until you achieve a pastel robin’s egg blue shade.
Speckling Effect: In a small bowl, mix cocoa powder with water. Dip a clean brush in the mixture and flick small specks over the frosting for that classic robin’s egg look!
Step 3: Assemble & Serve
1️⃣ Once the blondies are fully cooled, spread the buttercream frosting evenly over the top.
2️⃣ For extra decoration, press whole or crushed Cadbury Mini Eggs into the frosting.
3️⃣ Cut into squares and serve!
