Ingredients:

  • 6 TBSP butter
  • 1 cups chocolate chips
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Melt Chocolate and Butter: In a microwave-safe bowl, melt the butter and 1 cups of chocolate chips together in 30-second intervals, stirring between each, until smooth. Set aside to cool slightly.
  3. Mix Wet Ingredients: In a large bowl, whisk together the sugar, eggs, and vanilla extract until smooth and well-combined.
  4. Combine Chocolate with Wet Ingredients: Slowly add the melted chocolate mixture to the egg mixture, whisking continuously until fully combined.
  5. Mix Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  6. Form the Dough: Gradually add the dry ingredients to the chocolate mixture, stirring until a thick dough forms. If desired, fold in 1/2 cup of chocolate chunks for extra gooeyness.
  7. Scoop and Bake: Drop tablespoon-sized portions of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. Bake for 10 minutes, or until the tops are shiny and crackled but the centers are still soft.
  8. Cool and Enjoy: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm for a gooey texture, or store in an airtight container for up to a week.

What I love about this recipe is that it’s simple enough for everyday baking but also impressive enough to share at a party or special event.

These Brownie Cookies come together with ingredients you likely already have in your pantry—flour, butter, sugar, eggs, and, of course, chocolate.

The melted chocolate base gives the cookies a deep, indulgent flavor, while the chocolate chunks (optional but highly recommended!) take the gooeyness to the next level. They’re rich, soft, and just the right amount of chewy.
